How about some Potato Salad on Sunday?

I am aware that some people believe that food should never be used for comfort . Food loses its ability to truly comfort when it is used to mask deeper emotional concerns, do you agree?

Potato salad is a comfort food for me, and Sunday is a perfect day to make it!


This is so easy to prepare. From my mother's old notebook of handwritten recipes, I present to you:

Old-Fashioned Potato Salad

You will need:

3 pounds potatoes, diced and boiled
4 hard-boiled eggs, diced


1 1/2 cup celery, sliced thinly
1/4 cup onions, minced


1 1/2 cup mayonnaise
3 tablespoons vinegar
1 1/2 teaspoons salt
1 1/2 teaspoons sugar
1/4 teaspoon ground pepper
.

Mix it all together.



Add the vegetables, and gently fold in the eggs.



Then served!



What can be more pleasant than comfort food that doesn't need much work to put together?

Braai is simply a coming together with family and friends, open fire cooking outdoors, enjoying each others company.

Most times each family arrives with a salad dish, their meat and often their own drinks, everyone shares, makes an interesting selection, each having a special salad dish they enjoy sharing.

I ate half of it! Would you believe... 1 1/2 lbs of potatoes (in two sittings, one in front of the TV).

That looks sooo good! My recipe is pretty close except I add some spicy mustard. If it's just for me I usually add some jalapenos just for some extra kick. Potato salad is a great comfort food, as long as you don't eat your problems and end up on my 600 pound life!

Unfortunately for me, I have found much comfort from food. 😄

But fortunately I have had the opportunity to enjoy some really REALLY good food. Our family, just as many southern families come from a long line of good cooks.

This is very similar to our what our family likes. Leave out the vinegar, celery and SUGAR (ewwww)... ha ha and add finely chopped sweet pickles (probably gives it the "similar to vinegar" effect).... and the rest is pretty much the same. We save the celery for chicken salad.

It is an easy dish to make, just takes a little time to get the potatoes cooked and everything else chopped.

Now I would like to have a serving. Potato Salad sounds good.

Hahaha, I prefer my food over store bought, with some exceptions! Besides, I'm used to cooking my own food. It's way too expensive to be buying food all the time!
