[KNIVES UP!!!] Chef Straykat Cooks No.6: Creamy Chicken Pasta!

Hello, it's Chef Straykat! And now I'm back with my cooking series! For our 6th recipe post, I will be sharing to you how I made my Creamy Chicken Pasta

It's easy, promise!

The chicken meat here in my recipe were actually just scraps from the chicken breast I used for Chicken Katsudon. This recipe really makes me happy because I was able to turn this into 3 meals! If you're on a budget, being creative with your foods is really a must!

Honestly, I'm confused whether to call this recipe Chicken Carbonara but I didn't put milk on it so maybe I'll just call it creamy? I'm refering to the Filipino-style carbonara, by the way, which is supposed to be creamy and milky.

Now let's get started!

INGREDIENTS

250 to 300g fetuccine or any type of pasta
Approx. 1 Cup Chicken Breast meat (cut in small bits)
1/2 Cup All-purpose cream
2 Cloves Garlic (minced)
1/2 Medium white onion
3/4 Tbsp. All-purpose flour
1/2 Chicken seasoning cube
Grated cheddar cheese
1-2 Tbsp. Butter
Pinch of thyme
Dash of pepper lemon seasoning
Salt
Water




PROCEDURE


(1) Put water on pot and add a pinch of salt. (Add water enough for the pasta.) Add the noodles when the water boils and drain water when noodles is cooked but don't forget to scoop a few tablespoons of pasta water before draining. Also, follow the boiling/cooking time indicated on your pasta's packaging. Mine was around 8 minutes, if I wasn't mistaken.

One of my problems with fetuccine pasta is that it gets clumpy easily so I have to mix the pasta from time to time to avoid it.

(2) On a separate pan, add butter and saute garlic and onion. Add thyme.

(3) Then add the chicken bits and cook until the meat turns white. Sprinkle some lemon pepper seasoning and mix.

(4) Then add flour. Mix until it is blended with the meat.

(5) Pour in the all-purpose cream and mix. Then add the chicken seasoning cubes. Mix.

(6) Wait for the seasoning to dissolve. Simmer for at least 3 minutes or until the sauce gets thick a little bit. (If the sauce becomes too thick, you can add some all-purpose cream.) Add the pasta. Gradually add pasta water when the pasta became clumpy. Mix until sauce has completely coated the pasta.


(7) Turn off heat and grate some cheddar cheese. How much cheese is up to you. :) Mix until cheese has been incorporated well into the pasta. Serve and enjoy!

And now you have your Creamy Chicken Pasta! It's one of my easiest recipes and a recipe I would surely make again and again. It's also my first try making this recipe and I'm really happy that it tasted good. (I felt happier eating this than the beef lasagna from the cafe I've been to last week.)

I'll rate this a 9/10. It would have been a perfect score if it had parsley and toasted garlic bread on the side. I paired it with soy milk though. Hehe!

And of course, you can use other meat in case you don't like chicken. :)
