Broccoli Soup

Hello Foodies!

With the onset of winter season, soups become my favorite dish. I love soups as a beverage before dinner in winters. I find it a very comforting food. My normal homemade soups are tomato, mushroom, mix veg and thukpa but this time I started my soup therapy with broccoli soup. The soup is thick and creamy and has a very consistently fine texture. It is easy to make and requires very less time to prepare.

Broccoli is not a highly loved or preferred vegetable but we all know how healthy it is. So it must be consumed in some or the other form.

Let’s see how we make it.

Ingredients

2.Ginger garlic paste2 TBSP
3.Chopped Onion1/2 Cup
4.Flour2 TBSP
5.Butter2 TBSP
6.SaltTo taste
7.Oregano1 TBSP
8.Chilli flakes1 TBSP
9.Black pepper1/2 TBSP

Method

**Step 1: Wash the broccoli well and separate out the florets. Boil the broccoli in hot water for about 10 minutes. Strain out the florets and keep aside.
Step 2: Take a pan and heat butter in it. Saute the onion in the pan until golden brown.
Step 3: Add ginger garlic paste and cook for 3 more minutes until the raw smell of ginger and garlic is gone.
Step 4: Now add the broccoli florets and saute for another 5-7 minutes on low flame. Cover the pan.
Step 5: Allow the vegetables in the pan to cool. Once cooled, take a mixer grinder and grind the vegetables to a fine paste.
Step 6: Now pour the paste back to the pan, add salt, pepper and herbs and mix well. Add 1 cup of water and let the soup boil for about 5 minutes on low flame.
Step 7: Turn of the flame and pour the soup in bowls. Garnish with fresh cream and serve hot.

This soup recipe is amazing for non soup lovers too because it tastes more like an Italian dish than a soup. Must try!

Though I don't like broccoli, but it looks good.

Yes, you will like it. It doesn't taste too much like broccoli and hence can be consumed even if you don't liek the taste of broccoli.
