A Simple Delicious Carrots Ginger Soup Recipe π₯π².
Hello Hivers and plantpower(vegan) friends. Hope we are all having a productive day while enjoying the beautiful weather. And oh, the season is already showing signs of celebration vibes. And soon enough we will start decorating our trees ππ³. I love π this season and I know you also do .
So today we are going to be enjoying some soup of carrot and ginger I made to accompany lunch since I was not able to go grocery this past weekend due to some work, but since I have left overs, I made some delightful delicious carrot and ginger soup which I bring to share and show you awesome friends.
The Key to carrot π₯soup we all know is the carrots, and if we can try, I think the smaller carrots taste sweeter especially while going to make a carrot soup. Smaller in size and still fresh is the best ones we can enjoy while making a delicious carrot soup. I however has added a bit of ginger in this soup to jazz up this version of carrot soup π²
Here I show and share the extra ingredients and steps for this recipe:
INGREDIENTS:
Bunch of smaller carrots
Some onion stems
Ginger size of a thumb
1/2 teaspoon of black pepper
1/2 teaspoon of curry powder
1/2 teaspoon of thyme
1/2 teaspoon of sea salt
2 tablespoons of vegetable oil
1 soy cube
STEPS FOR PREPARATION:
Step 1.
To prepare this soup I first have to clean , strip peel the carrots, wash and slice them to enable easy blending.
Step 2.
Next I cleaned, washed and slice the ginger and the onions stem.
Step 3.
To stir - fry the ingredients , I heat up π³some vegetable oil, added salt, the ginger, the onion stem to tender a bit before adding the carrots. Stir and fry them all together evenly before I added the curry and thyme.
Step 4.
I will add a little water to help soften the carrots and allow to cook for about 5 minutes.
Step 5.
Then I bring it down to cool before I go on to blend it into a puree.
Step 6.
I will finally cook the soup adding the black pepper, the soy cube, also checking taste .
Once the soup is ready , I serve it hot. Tasted so delicious and aromatic. The kind of flavorful soup for a delightful lunch π₯. We can serve with warm rice, toasted bread π₯― or sponge cake.
I have served this delicious soup π² with sone roasted golden potatoes π₯. It was really enjoyable.
