CREATIVE-SUNDAY: Healthy Snd Delicious Plantain Pancakes Recipe π₯π³
Happy beautiful Creativity Sunday to all the creative hearts β₯οΈπ₯° of Hive Learners . The day is a very bright one from my end and to enjoy a delicious breakfast this morning I decided to make some pancakes π₯, not just an ordinary one but a healthy delicious one made from plantains.
This recipe for my todayβs Creative Sunday is an ultimate comfort food for breakfast and even brunch made from plantains and few other ingredients . They are very light and tender, almost like crepes.
What I love of this recipe is the delicious flavor,. And they are not just light , tender in consistency, but has a natural sweetness that made it so irresistible . All we need do is just add a little sweetener or sugar if needed.
Pancakes are very easy to prepare and has just few ingredients to bring it to the table without time consuming. And we can also make our pancakes with all purpose flour , but plantains , almond , corn π½ , soy and other gluten free flours makes pancakes π₯ healthier.
Here friends I show and teach you of how to prepare this recipe with step by step.
INGREDIENTS :
2 ripe plantains ( not over ripe)
1 large egg π₯
1 tablespoons corn flour
1 tablespoon of margarine π§
3 tablespoon of soy flour
1:2 teaspoon of baking powder
1/8 of salt
1/4 of cinnamon powder
2 teaspoon of premium sugar.
STEPS FOR PREPARATION:
Step 1.
To prepare I will wash, peel, slash cut open the plantains , then cut into lines before chopping them in tiny sizes for easy blending.
Step 2.
Next I will take the chopped plantains into the blender for blending , adding just little water π¦.
Step 3.
I will gradually blend the plantains, without much pressure.
Stress 4.
To add other ingredients, I will pour the plantains batter in a bowl.
Step 5.
Then add all other ingredients in another smaller bowl to incorporate. The soy flour,, the corn flour π½, the baking powder, salt,sugar and cinnamon.
Stir all properly.
Step 6.
Next is to add the combined ingredients into the blended plantain batter gradually and mix to avoid lumps.

Step 7.
I will add the margarine π§, and using the spoon π₯ to incorporate and mix properly.

Step 8.
I will add the egg and mix evenly. Do not over mix , just few foldings.
Step 9.
To fry this healthy breakfast π₯, I will glaze the frying pan π³ with vegetable oil, set it on the cooker, scoop the batter gradually to make a pan cake π₯.

Allow to dry at the edges forming some bubbles before flipping it over π₯π³.
And gradually fried all the batter.
