[ENG - ESP] Fresh Pepper, Red Oil Cuisine (Another OF My Mother's Recipe)

Its another almost weekend when we look up to enjoy and treat ourselves to something good . And today you are going to enjoy some cuisine from my native recipe. Another special recipe I learnt from my mother.
The base of this recipe is some good fresh peppers, either red or yellow, and then red oil which is normally obtained from palm tree 🌴 fronts , usually processed for a delicious cooking red oil. Then the uzuza leaves 🍃 with its powerful aroma for garnish .
My mother usually will prepare this delicacy with a tuber of yam 🍠 cut into chunks once the yam 🍠 is properly washed since it will not be peeled. Then, she will either boil the yam tenderly using a big large pot since its for lunch 🥙 or dinner for the family , or she might decide to roast the yam using a naked fire 🔥 wood process in a grill form. But because I don’t have any yam in the pantry , I have decided to use a sweet potatoes which I love better.
Here in my country Nigeria 🇳🇬. this recipe is a staple as I can see women vendors roasting lots of yams 🍠 cut into chunks and hips of boiled potatoes 🥔 by the side heating up. Next to these tubers you will see a bowl 🍲 of red oil and fresh crushed peppers 🌶 in it. This is one good lunch many people here enjoy 😊 .

And as I came in earlier today with little time on my hands , I decided to quickly prepare this staple recipe to share with my vegan 🌱 family . Its one we can enjoy for lunch or dinner with the whole family this weekend .
Here below is the quick and easy process to this recipe.
INGREDIENTS: (one serving)

1 medium sweet potatoes 4 fresh orange peppers 1/4 teaspoon of salt 1:4 teaspoon of chili pepper 3 leaves 🍃 of uzuza 3 tablespoon of red palm oil
STEPS FOR PREPARATION:
Step 1.

We begin by first washing the potatoes since we are not peeling it.

Then we cut the potatoes into four chunks
Step 2.

We take the potatoes into the pot here, adding water to cover length

As here above.
Step 3.



We wash and crush the fresh orange peppers using this manual crusher.

And thinly slice the uzuza leaves 🍃
Step 4.


And we have the fresh chili and the leave here readily
Step 5.


We place the potatoes on the cooker to cook, covering the pot.

And once the potatoes cooks, we drain it in a basket to start cooling



The red oil we place in the hot water to loosen up its thickness
Step 6.


Next we mix our red oil into a sauce by adding the salt, the chili powder and the fresh orange peppers.


And here above, and we stir them to incorporate
Step 7.


We use the fork to gently poke the potatoes



And add our fresh pepper, red palm oil sauce on the poke areas to gently penetrate into the potatoes
Step 8.


We add our uzuza leaves on the potatoes to garnish it for flavors.

Oh waoh! I can’t help but wants to eat up this deliciously and appetizing meal 🥘..This recipe is prepared exactly the way my mother would have love it. I surely know she will be applauding me from her resting place because of the efforts I kept into this recipe.

You can enjoy this meal in your own way choosing your choice of pairing. It could be yam tuber, Irish potatoes 🥔, sweet potatoes 🍠 or even plantains, mostly unripe. Crush your peppers and make it a delight from your kitchen to the dining table. Am sure your loved ones will enjoy 😊 it❤.

Es casi fin de semana otra vez, momento en el que miramos hacia arriba para disfrutar y darnos un capricho. Y hoy vais a disfrutar de una receta de mi tierra natal. Otra receta especial que aprendí de mi madre.
La base de esta receta son unos buenos pimientos frescos, rojos o amarillos, y luego aceite rojo, que normalmente se obtiene de las palmeras 🌴, y que suele procesarse para obtener un delicioso aceite rojo para cocinar. Luego, las hojas de uzuza 🍃 con su potente aroma para decorar.
Mi madre suele preparar este manjar con un tubérculo de ñame 🍠 cortado en trozos una vez que el ñame 🍠 está bien lavado, ya que no se pela. A continuación, lo hierve en una olla grande hasta que queda tierno, ya que es para el almuerzo 🥙 o la cena de la familia, o bien decide asarlo al fuego 🔥 en una parrilla. A continuación, les presento el proceso rápido y fácil de esta receta.
INGREDIENTES: (una ración)

1 boniato mediano 4 pimientos naranjas frescos 1/4 cucharadita de sal 1/4 cucharadita de guindilla 3 hojas 🍃 de uzuza 3 cucharadas de aceite de palma rojo
PASOS PARA LA PREPARACIÓN:
Paso 1.

Empezamos lavando primero las patatas, ya que no las vamos a pelar.

A continuación, cortamos las patatas en cuatro trozos.
Paso 2.

Ponemos las patatas en la olla y añadimos agua hasta cubrirlas.

Como aquí arriba.
Paso 3.



Lavamos y trituramos los pimientos naranjas frescos con esta trituradora manual.

Y corta finamente las hojas de uzuza 🍃
Paso 4.


Y aquí tenemos el chile fresco y las hojas, listos para usar. Paso 5.


Colocamos las patatas en la olla para cocinarlas, tapando la olla.

Y una vez que las patatas estén cocidas, las escurrimos en una cesta para que se enfríen



El aceite rojo que colocamos en el agua caliente para diluir su espesor.
Paso 6.


A continuación, mezclamos nuestro aceite rojo en una salsa añadiendo la sal, el chile en polvo y los pimientos naranjas frescos.


Y aquí arriba, los removemos para incorporarlos.
Paso 7.


Usamos el tenedor para pinchar suavemente las patatas. 


Y añade nuestra salsa fresca de pimienta y aceite de palma roja sobre las zonas pinchadas para que penetre suavemente en las patatas.
Paso 8.


Añadimos nuestras hojas de uzuza sobre las patatas para decorarlas y darles sabor.
