Today’s Recipe:Chicken Afritada!

Today is a holiday, so it's a perfect time to explore menu options and recipes for cooking meals that the whole family will enjoy.

Today, I'd like to share one of my favourite recipes I made for my fellow educators at school.

How was the Chicken Afritada you tried? Of course, we love many chicken recipes, especially when we make them for fried chicken or adobo, but today, I'll share my recipe for making chicken afritada with you.

If you know me well, you know the glimmer in my eyes when I see food containing tomato sauce. Usually, I love them when I eat out or at parties, especially Chicken Afritada.

I tried making my own because I love dishes with tomato sauce. After a few unsuccessful attempts, I finally found the ideal ratio of ingredients.

Another dish I know I am very proud of is chicken afritada.

Together with potatoes, carrots, and bell peppers, chicken afritada is simmered until it's perfectly tender in a fresh tomato-based sauce. This traditional Filipino stew is tasty, filling, and inexpensive to prepare. Ideal for special occasions and family dinners!

The Filipino classic stew chicken afritada is made with beef, pork, chicken, or fish simmered in tomato sauce with bell peppers, potatoes, and carrots. It is delicious and filling, perfect for special occasions and family dinners.

Components

1/4 of a cup of oil
· Quartered and peeled two medium potatoes
· One large carrot, chopped into cubes after peeling
· A whole, roughly 3-pound chicken sliced into serving portions
· One tiny onion, thinly sliced after peeling
· three minced and peeled garlic cloves
Half a dozen big Tomato Sauce
A tablespoon and a half of fish sauce
· One cup of Water
· Season with Salt and pepper.

· Aromatics: Sautéed garlic and onions intensify to make the best taste.

· Chicken: You can use other parts of the chicken like wings and legs but Bone-in chicken works best in this recipe for a richer flavour. Though the breast can become dry and chewy during the slow cooking process, thigh fillets are a good option if you prefer boneless.

· Tomato Sauce: Since ripe tomatoes have more sweetness and juice, use them.
· Vegetables: potatoes and carrots increase serving sizes and offer texture and colour. (You can add sweet peas, and bell peppers if you want)
· Fish sauce: imparts an umami flavor
· Water: Use as much or as little as desired, depending on the sauce. For added depth, you can also use chicken broth.
· Pepper and salt: Salt brings out the flavour of the food, while pepper kicks it.

Steps for cooking chicken afritada

Heat oil to brown potatoes and carrots. Remove and place aside. Remove from the pan and let them cool on paper towels.

Sauté the garlic and onions until they become tender. Chicken is added and then gently browned.

Add the vegetables and pour in the tomato sauce. Cook them. For a brief while, add the fish sauce and simmer.

After adding the Water, boil it. Once the chicken is soft and the sauce has somewhat reduced, turn down the heat, cover, and continue cooking. When the vegetables (potatoes and carrots) are finally fork-tender, add them and cook further.

Add Salt and pepper to taste
Simmer until the sauce reaches the desired consistency.

·Steamed rice pairs well with Chicken Afritada as a main meal for lunch or dinner. It's also trendy and perfect for events like parties and get-togethers!
