Air Fryer Diaries: First Time Making Banana Cake... <3
I've been enjoying the kitchen more these days because of the air fryer. My parents are even laughing because I've been volunteering to cook whenever I have extra time. Well, why not? The reason why I dislike cooking was because of the scary hot cooking oil, but now, I need not worry about that. haha
Despite that, I won't be sharing some of the dishes I made recently. Rather, I'm going to share my experience in making banana cake.
Banana cake is my papa's favorite and I think it's one of the easiest and simplest ones to make, and so I gave it a shot. I documented the first time I made it, but to be honest, I've made it a couple more times since then. haha I guess my parents loved it!
LET'S START!!!!
These were the ingredients I prepared for the banana cake:
- bananas (2)
- All-purpose flour (1/2 cup)
- baking powder (1 tbsp)
- baking soda (1/2 tsp)
- brown sugar (1/2 cup)
- salt (1/2 tsp)
- vanilla extract (1tbsp)
- canola oil (5 tbsp)
- eggs (2)
- pili nuts (optional)
- raisins (optional)
Once I've prepared the ingredients and the stuff I need, I started with the procedure...
Firstly, we have to mash these babies. The riper it is, the better and easier to mash. It's also sweeter if it's overripe. :)
Once the banana is ready, I added some oil, eggs and vanilla extract. Then, mix... mix... mix... The vanilla extract smells so good!!! I like it! haha
After mixing, let's add the dry ingredients individually. I started with the flour, then the brown sugar, baking powder, baking soda and lastly the salt. Once they're all in, I combined them slowly, but I was careful not to over mix.
After transferring it in the foil container (I use this because I have no baking pan. haha.. it works anyway, so it's all good!), I'm now ready to add some toppings. I just added some pili nuts and raisins the first time I made it... but the second (and so on) time, I also added some bits of the dark chocolate I have in the fridge. haha
While doing so, I also pre-heated the air fryer at 160 degrees Celsius for 3 minutes.
After it was all set, I placed it in the air fryer set at 160 degrees Celsius. I initially set it for 30 minutes, but after checking, it was already good to go after about 25 minutes, so I just took it out.
We just let it cool for a couple minutes before transferring it on a plate... and then, we attacked! It was so good! I'm so happy to successfully make it on my first try... My parents loved it, too! They've requested me to make it a couple times now... so, I told them, I'd make something every day off (Sunday). haha
I actually made three batches last Sunday because papa had some visitors and we also wanted to eat it. haha
Also, I had to run an errand today so I took a day off... and ended up making some mango cake a while ago (as requested by mama)... I'll share about it next time. I might make it again this coming Sunday since tomorrow is a work day. XD
Oh well! Thanks for checking this out! See you around and stay tuned for more air fryer diary entries! (^^,)/

It's a perfect treat this weekend. :D
Just curious about the oil though, can I use another kind of oil apart from canola?
it's originally melted butter, but my family is trying to avoid butter... haha Canola was a healthier choice. I believe any oil would do.
Oh, so okay pala na coconut oil ang gamitin. This is what we've been using at home since my wife's tests turned in better results since we began using this at home. Good cholesterol went up while bad cholesterol went down according to her doctor. 😁😁😁
That's great to know... Same sa kanila mama... Hypertensive kasi, so we had to change our lifestyle, thus the air fryer din para less oil... We usually use canola or gawa si mama garlic oil... 😁😁😁
Ah, hypertensive pala si mama mo. Yung sister-in-law ko hypertensive. May day siya na boiled saging na saba lang ang kinakain niya at fresh fruits. Maganda raw ito once a week. No oily, sugary at salty food. Sana mag improve ang health ng parents mo. 😊
It's been improving since we changed our lifestyle and eating habits po.. though borderline hypertensive pa rin si mama, it's so much better than last time... Si papa nman, back to normal na yung BP the last time I checked. Thank you po... 😁😁😁
Good to know. Nice yan, lifestyle change talaga ang susi sa healthier life. Kailangan ko rin mag-lifestyle check. haha. 😊
Cheers for a healthier life!!! 🙌🙌😁
