Let's make a delicious "Eggplant Moju" that is enjoyed during the festive season.

How are you,Today is the start of a busy week. Everyone is equally busy. Wishing everyone a good morning for a successful and happy day. Friends, today I am going to show you a very delicious recipe made from eggplant.That is Eggplant Moju.So let's see how to make this eggplant moju.
Ingredients;
- 10g of eggplant
- Chopped garlic
- Chopped ginger
- Three green chilli pods cut into pieces
- A large onion cut into squares
- Six dates, pitted and cut into pieces
- 100ml of oil
- Curry leaves
- A fwe sticks of cinnamon
- A tablespoon of tomato sauce
- A teaspoon of mustard powder
- One and half teaspoon of chilli powder
- 1/4 teaspoon of turmeric powder
- A tablespoon of sugar
- A tablespoon of vinegar
- Half teaspoon of pepper
- A teaspoon of salt
The method of making;
Wash and clean the eggplant and cut them into 1/4 centimeter-sized pieces. Add half a teaspoon each of turmeric powder and salt powder and stir.
Now add oil to a pan and when the oil heats up, fry these eggplants on medium flame for about five minutes.
Now fry the chopped onions, green chillies and curry leaves separately for about a minute.
Now heat a clay pot and add one tablespoon of oil to it.Add crushed ginger, garlic, cinnamon, pepper, mustard pwder and chili powder to it.
Then add one tablespoon of vinegar and one tablespoon of sugar to it.
After, add fried green chillies, curry powder and big onion and fry well again.
Now add the previously fried eggplants and fry them.
Finally add chopped dates and a tablespoon of tomato sauce and stir well.
Take off the heat and cover with a lid for about 5 minutes.
A really delicious recipe. A delicious dish.Dates have been added to this dish, so there is a bit of sweetness here. This dish is collected during festivals in my country.So I hope my dear friends who love this eggplant moju will try this recipe..
