The method of making;

First, add flour to a bowl and add a teaspoon of salt to it.

Now add water little by little and make a regular coarse flour mill.

20230507_075322.jpg

If you add the right amount of flour and water in the right way and knead it well for about 5 minutes, you can turn it into a regular flour mill.

20230507_075437.jpg

Leave it closed for about ten minutes.

20230507_075451.jpg

Meanwhile, let's prepare the vegetable mixture. Wash and clean carrots, onions, curry leaves, cabbage, leeks and green peppers and cut them all into very small pieces.

20230507_080053.jpg

20230507_080313.jpg

20230507_080750.jpg

Now add one and a half table spoon of oil to the pan, heat it and add chopped onion and curry leaves.

20230507_081542.jpg

20230507_081558.jpg

Add green chillies and saute on low flame for about a minute.

20230507_081605.jpg

20230507_081702.jpg

Now add turmeric powder and cumin powder to it and mix it.

20230507_081710.jpg

20230507_081719.jpg

20230507_081745.jpg

Now add the cabbage, carrot and leek and stir-fry on a low flame for about three to four minutes.

20230507_081807.jpg

20230507_081814.jpg

Add pepper powder, remaining salt powder and chilli pieces and stir well again.

20230507_081924.jpg

20230507_082009.jpg

Now turn off the stove and finally add the mashed potatoes and stir well and remove from the stove.

20230507_082029.jpg

20230507_082134.jpg

Now let's prepare the samosas from the flour mixture. For that, make about 5 small balls from the closed flour mixture.

20230507_082231.jpg

20230507_082402.jpg

Now take a tray and sprinkle some flour on it. Then take one small ball and flatten it.

20230507_082417.jpg

20230507_082425.jpg

20230507_082612.jpg

We want this pastry to be square, so we need to cut off most of it.

20230507_082700.jpg

Keep the prepared vegetable mixture as shown in the picture.

20230507_083114.jpg

Fold one round as shown in the figure.

20230507_083144.jpg

We need a flour mixture of normal thickness to stick the prepared samosas. For that, add two tablespoons of bread flour in a container. Add water little by little to make it thick.

20230507_082943.jpg

20230507_083102.jpg

apply the prepared flour mixture as shown in the picture.

20230507_083206.jpg

Cut the strips so that the area where the flour liquid is used is not separated.

20230507_083219.jpg

20230507_083222.jpg

20230507_083754.jpg

Now roll this well and cover it with apply liquid flour to stick it in a round shape.

20230507_083824.jpg

20230507_083853.jpg

20230507_083834.jpg

To cover the pasted sides well, we can use a strip of flour that we removed a part of before for this.

20230507_083931.jpg

20230507_085721.jpg

Now fry in deep oil for four to five minutes until both sides are golden.
