Hoy me uno al Foodie Contest: BLUE DESSERTS con un dulce de nuestra gastronomía criolla, que me recuerda mucho mi infancia, cuando tenía 14 años de edad , aprendí a hacer esta maravillosa y sencilla receta de mi abuela. En esa época mis hermanos, mis primos y yo, siempre esperábamos con impaciencia el día en que veíamos a nuestra abuela comprando los cocos porque sabíamos que iba a preparar estas deliciosas conservas de coco. Desde entonces, me gusta prepararlas, aunque hay muchas ´por internet esta me sale muy bien, además es fácil y rápida de hacer sólo requiere tres ingredientes. Así que no la pierdan de vista para empezar a hacerla.
Today I join the Foodie Contest: BLUE DESSERTS with a sweet of our Creole gastronomy, which reminds me a lot of my childhood, when I was 14 years old, I learned to make this wonderful and simple recipe from my grandmother. At that time my siblings, my cousins and I always looked forward to the day when we saw our grandmother buying coconuts because we knew she was going to prepare these delicious coconut preserves. Since then, I like to prepare them, although there are many 'online this one comes out very well, plus it is easy and quick to make only requires three ingredients. So do not lose sight of it to start making it.
01 coco seco, 1.1/2 taza de azúcar, 1/2 taza de leche, 3/4 taza de agua. color vegetal al gusto || 01 dry coconut, 1.1/2 cup sugar, 1/2 cup milk, 3/4 cup water. vegetable color to taste.
Lo primero que hacemos es sacar la pulpa del coco, luego le quitamos la corteza y lo rallamos.

Luego en una olla colocamos el agua y el azúcar dejamos que se haga un caramelo.

Seguido le agregamos el coco rallado, la leche y el colorante y mezclamos muy bien con la ayuda de una paleta de madera.
Then add the grated coconut, milk and coloring and mix very well with the help of a wooden paddle.
Continúamos cocinando a fuego bajo removiendo constantemente con la paleta hasta que haya reducido el líquido, esta mezcla debe quedar húmeda, y el proceso durará de 25 a 30 minutos.
Continue cooking over low heat stirring constantly with the paddle until the liquid has reduced, this mixture should be moist, and the process will take 25 to 30 minutes.
Dejamos reposar por espacio de diez minutos y con la ayuda de dos cucharas voy formando las conservas, las colocamos encima de un papel parafinado. Dejamos enfriar para que endurezca y la vamos colocando en un molde para cupcake o la podemos dejar en el papel parafinado.
Let it rest for ten minutes and with the help of two spoons form the preserves, place them on waxed paper. Let it cool so that it hardens and place it in a cupcake mold or we can leave it on the waxed paper.
Y listo! a disfrutar de un excelente y delicioso dulce criollo.
