Hoy traigo esta receta deliciosa y sencilla de preparar solo tomará unos minutos; se trata de un guiso de berenjenas al curry, saludable, porque la berenjena se compone principalmente de agua y aporta pocas calorías, es una fuente importante de fibra, potasio y hierro, rica en vitaminas y minerales. favorece la reducción de los niveles de colesterol, por eso es muy bueno consumirla. Aquí les dejo el paso a paso de esta sencilla receta.

03 berenjenas, 02 cebollas, 02 tomates, 1/2 pimentón verde, 02 dientes de ajo, 01 taza de agua ó caldo de verduras, 01 cucharada de orégano molido, 02 cucharadas de curry, 02 cuccharadas de aceite, sal y pimienta al gusto.

03 eggplants, 02 onions, 02 tomatoes, 1/2 green bell pepper, 02 cloves of garlic, 01 cup of water or vegetable broth, 01 tablespoon of ground oregano, 02 tablespoons of curry, 02 tablespoons of oil, salt and pepper to taste.

Comenzamos esta sencilla receta lavando, pelando y cortando en cubos las berenjenas, seguido la agregamos en agua con sal y la dejamos reposar 10 minutos, para eliminar su amargor que la caracteriza. Luego la lavamos y escurrimos.

We start this simple recipe by washing, peeling and dicing the eggplants, then we add them in salted water and let them rest for 10 minutes, to eliminate their characteristic bitterness. Then we wash and drain it.

Seguimos hacemos lo mismo con los aliños, los lavamos y cortamos en cubos, la cebolla, el pimentón y el tomate.
Then we do the same with the seasonings, wash them and cut them into cubes, the onion, the paprika and the tomato.

Luego en una olla coloco el aceite y rehogo el ajo machacado, la cebolla hasta que estén transparentes y para luego incluir el pimentón.

Continuamos con las berenjenas, salteamos unos minutos, añadimos el tomate revolvemos y dejamos cocinar unos segundos para luego incorporarle el agua.

Sazonamos con sal y pimienta, mezclamos muy bien y cocinamos tapado a fuego bajo.
Season with salt and pepper, mix well and cook covered over low heat.

Pasado cinco minuto destapamos y agregamos el curry y el oregano, seguimos cocinando por espacio de cinco minutos más ó hasta que las berenjenas haya ablandado.
After five minutes, uncover and add the curry and oregano, continue cooking for five more minutes or until the eggplants have softened.

Hola @theresa16, todo lo relacionado con la berenjena me encanta, esta deliciosa hortaliza es una de mis favoritas y muy versátil para preparar diversos platillos.

En pocas ocasiones he usado curri para cocinar, intentaré preparar tu receta.
