Another winner in the kitchen!

She's growing up fast!

My daughter is growing up so fast, it's insane these huge steps she's now making. I see the huge growth she's gone through in the past year. I can see how much more confident she became now that she understands Spanish to a level that she ended the first trimester with a kick ass report card. Now that she overcame the language barrier, she's one of the best in her class..

I'm so freaking proud of her! Now the only thing left that still worried me was the food issue. I mean, she coughed for 6 weeks straight and there was no improvement and I really started to get worried after the doc gave two types of meds and nothing helped.

Moment of realization?

I guess she finally realized she actually needs some good stuff in her body to be able to heal and she left behind her version 1.0 that always made a fuzz and worse. I mean I can't even count the times that we had her crying her eyeballs out, totally hysterical when we offered some healthy food.

And then my boyfriend told her from next year we will do it differently, and so we did. The thing is, we expected a lot of crying the first weeks, a lot of stress around the topic, but nothing like that happened. Every single day from 2024 she ate veggies and fruit and some things were completely new to her while others were something she was horrified to eat because of the smell/look/texture until now. How life can change overnight, it amazes me!

Spaghetti a la mama

I guess everyone has a favourite type of spaghetti. Mine has always been carbonara, as a child it was the only spaghetti I ate but luckily for me, my mother didn't mind making it as she loved it too. Although her recipe was different and probably more authentic than mine, Over the years, I created one that's simple and my daughter's favourite. No way she ate "dad's spaghetti" which is the regular (Bolognese) variant.

Now I have to admit that I eat vegetables and love them but the way he makes spaghetti, I really don't like it. First of all, I'm not a fan of Bolognese sauces in general or even anything with tomato based sauces so this is not really weird. But I also don't like the big chunks of veggies and the way it looks (gosh, from who would this little girl have the food issues, I wonder, haha). I just like my food to look a bit appealing, can't help it.

So it's been forever that I make our spaghetti for us and my boyfriend makes one badge of his version so he can freeze portions for other days.

Let's try something different

Sometimes when I have a leftover of the carbonara sauce, my boyfriend adds it to his plate as he likes the mix of creamy and Bolognese together. I told him I can try to make the spaghetti for you one day but then add the creamy sauce to it. Today was D-day. I spent way too much time in the kitchen to my liking as it was a big portion I made and it caused me a lot of back pain but I can say I made a winner!

Although it didn't turn out the way I expected, it tasted way too much like tomatoes still when I was almost done prepping the sauce. For a moment I was going to chicken out and quickly grab a sandwich for me and my daughter but then I realized I can't do that, she's been such a great sport eating everything, I can't back off and not eat this myself today, I know better than this, lol.

Problem solving mindset

I always try to put myself in her shoes as I know how it is to have a mother feeding you stuff you really hate and find horrible to eat. Where my mother just didn't bend with me by listening to my tips on how I would eat it, I offer her solutions so that it's less scary to try and less overwhelming to eat. So instead of eating the sauce as my boyfriend prefers it, I made sure to take a part of the sauce to blend it for a little while in the kitchen machine. This way the sauce looked way more appealing for the both of us and I decided to just throw a pile of parsley on top (which I always appreciate a lot) to make it more my thing.

Granted, I was not looking forward to eating it until I actually did and started to appreciate it more and more. My big girl was eating it far better than expected, no long faces anything, heck she even asked for a second plate when I was getting a second myself. The sauce was filled with veggies, while the carbonara sauce contains just parsley in terms of greenery. Winner!

The second best thing about this spaghetti is that my boyfriend had 0 stomach issues afterwards, which he normally always has with his own recipe. I guess adding fresh stuff only and no spaghetti sauce from a bag really does wonders..

There's enough left for all of us to have another meal, maybe tomorrow I will add some mushrooms for my boyfriend as he likes them in the spaghetti. I didn't do that today because I don't eat these. At least nowadays I can prep it for him instead of skipping it all together...

Calling it a night

Would love to share the recipe but it's getting close to midnight and tonight was one for the books in terms of stupid actions by me, will share that another day. I still have to hand out my daily tips and then calling it a day. Engagement follows tomorrow :)

Yeah we know that but she took a bit longer to discover that they can taste good too! You will probably laugh when you find out what happened after :)

Oh today we had to solve a mould issue so I've been busy moving stuff from room to room lol. Just finished writing my post about yesterday and wanted to head to bed soon. I don't even remember if I tipped already today. Let's see !PIMP

Nah it wasn't too bad in terms of nothing we can't solve, just sucked that I didn't know this was an issue as I left my best clothes in that closet. Thankfully for me mine are ok but my boyfriend's clothes the ones on the side with the mould are affected and I'm not sure if I can wash it out .. gonna try tomorrow, we'll see..
