Goat cheese

Not too long ago, I tasted goat cheese for the first time when it was served in a salad at the restaurant where we had tapas that evening.
I was surprised by the taste and it was my favorite ingredient in that salad. Unfortunately, the second time we ordered it, the salad was mainly lettuce and very little other ingredients that balanced out the salad well, so I never ate it again since. I constantly forgot to try goat cheese in a salad at home because I always forgot to buy it when I was doing groceries. Yesterday, thankfully, I saw the goat cheese when browsing for groceries and decided to order two of them and hope they'd be nearly as good as the ones we ate in the restaurant.

I had no idea about the other ingredients

I ordered lettuce but apparently it was sold out so I had to find a replacement from another supermarket that delivers home with a food delivery service app. Thankfully, they had fresh spinach so I decided to order that instead as both like spinach more than lettuce anyway. I made a tiny mistake though, I thought these were the tiny bags of spinach, barely enough for one person, so I ordered 3 in case we wanted to have an extra salad later. When it was delivered it, I was shocked to see 3 big bags of spinach haha. Oops. I know what we'll be eating tomorrow and I may need to process the rest as well. I don't like to waste food if not needed so I will probably use it in smoothies tomorrow to.
So now that I had the spinach, I knew I was going to add walnuts and for the rest I was lost. I looked up some recipes and found that it's actually quite nice to eat goat cheese in a very basic salad with just a few ingredients. I decided to go for spinach, goat cheese, walnuts, a few sesame seeds and a little bit of red onion topped off with some extra virgin olive oil and a bit of pepper.

I was surprised how good it was!

I tried to get the same goat cheese slices heated up but I failed (lol), still I like how the taste gets even better when it's heated up. But I need to check how to do this properly next time. For now, I switched it to partially hot sliced goat cheese and the rest cold, crumbled parts. I broke the walnuts into 3/4 and added small parts of onion. The extra virgin olive oil was a real treat on top of this simple, but delicious salad. Although I love a good meal salad, it's so much work, therefore I'm extra happy when I discover some meals that are ready in just a few minutes. This one is a keeper!

Looks like a really good salad. I like making a salad when the greens are prepped (washed and cut up) ahead of time.

It actually is, we ate it a few days now to make sure the spinach is not wasted.
Very simple salad, ready in minutes and tastes great. I have to look up how (un)healthy goat cheese is though, as I have no clue :)
