We finally have favorites!

I'm talking about favorite dishes that our daughter is absolutely crazy about. I wrote about this recently when I shared the food issues we've been having actually since forever. I also mentioned I tried two new things that she hasn't tried before which she both loved. Now let me tell you after some years of constant resistance, hearing your daughter say that she approves and even loves it (10 thumbs up, she said!) is making the cooking part a lot nicer. I've never really enjoyed cooking, only if it's for something that I absolutely love, but of course it's part of daily life. I remember that my mother used to not care when I didn't like something or was absolutely disgusted by something (due to dressings often), she'd not bow to make it less horrible for me.

We did it different

All these years, I always tried to keep in mind that sometimes leaving a dressing out can be the solution, or not expecting to eat as much etc. Unfortunately, this still never worked while we really tried to keep it as simple as possible for her without adding too many strange flavors and expecting her to try it. I learned from my mother's mistakes here lol. Even though it did not work most of the times, I'm very happy that I recently found not 1, but 2 winners in just a few weeks time. Both are dishes that I never made or hadn't eaten in many years. I will share one of them with you today.

Homemade meatballs!

Where we tried to eat as little minced meat as possible for some years now, I bumped on a meatball recipe and decided to try it because it looked simple and I don't even remember the last time I ever made a meatball, it's been that many years. Time to give this a try! The process is very simple and even though I still need to work on my rolling skills, I'm happy how they are received here. Although every time we intend to keep a few aside to eat cold as a snack, they never make it to that point.

The ingredients & the process

  • 500 grams of minced meat (I've used beef & pork mixed this time but it's a personal preference)
  • 2 eggs
  • 1 tablespoon of ketchup
  • 1 tablespoon of mustard
  • 1 teaspoon of nutmeg (optional, I liked it but left it out the second time as my boyfriend doesn't respond well to it
  • pepper
  • salt
  • Maggi (one of my favorite things from Holland that makes many dishes taste better)
  • Chopped parsley
  • Bread-crumbs

As you can see I don't really add numbers to the herb section as I just add it and taste it. It also depends a bit on the minced meat you used.
The process is the easiest one you will find: mix all ingredients and start rolling the meatballs in the size you desire. I always make the smaller ones as I'm way too impatient to bake the bigger meatballs. After you rolled them, leave them in the fridge for 30 minutes before you start baking them.

We had some gravy left from Holland and there's nothing better than meatballs and gravy so we always add this to the meatballs it's delicious! Serve it with some potatoes and veggies to your liking and enjoy a good meal!

What's there not to like, with some mashed potatoes on the side YUMYUM 🤤 and some greek yogurt and/or some salad...ohhh 🤩

Absolutely good combo mashed potatoes. The first time we didn't add these because we were way too happy to taste them (it was later already so we didn't need a full meal).

I have learned that they also make great cold snacks :)
