I love making wraps

Why? Because even though we often use similar ingredients, no wrap is ever exactly the same. Sometimes we use lettuce and other times it's baby spinach, this alone gives the wrap a totally different bite and taste. Where I used to make the wraps with minced meat for years, and using a bag of fajita herbs, I switched this to a totally different wrap that looks more like how I'd throw ingredients together for a nice meal salad. The reason we switched is actually related to my boyfriend's stomach issues that appear more often with minced meat than with chicken and I personally like the possibilities of mixing up ingredients with chicken better. Especially if we have a missing ingredient and still want to use our left over veggies or chicken for the wrap, there's always a way to throw together a wrap that tastes great!

Quinoa

I learned that quinoa is such a great ingredient in a wrap when I fell in love with Ropogo's wraps in Budapest. Too bad I could only enjoy these for a short period of time because of them being closed for the last two months before we left the country. They were amazingly tasteful and filled with quinoas as well as falafel. It's actually because of these wraps that I will not try to make my own falafel this week because I think it will be a great replacement for the chicken. I have to wait a few more days until my food processor arrives because I learned the hard way that the regular blender won't do the trick, lol.

Ingredients in this wrap

I will share with you what I added to this wrap for now, until I (probably) find my new favorite ingredient soon.

  • Chicken filet (not heavily spiced)
  • Fresh baby spinach leaves
  • Quinoa (roasted and then boiled for extra flavour!)
  • Cucumber
  • Red paprika
  • Cashew nuts (I use unsalted)
  • Grated cheese
  • Homemade salsa from mayonaise, a teaspoon of ailoli, honey, pepper and fresh parsley

Now wrap it up and enjoy!
