My favorite vegetarian dish

This dish came to life thanks to a leftover day

I was searching for some healthier options in our diet, especially because of the declining health of my boyfriend at the time. This was still in Budapest. I bought sweet potatoe for the first time back then, and had no clue what to do with it, lol. As I had not eaten it before, it was hard to decide what I should eat with it. Therefore it took some days, maybe even a week or longer before I decided to just try out a mix of ingredients and hope for the best.

Let's see what's available

At the time, I checked everything in the fridge as well as freezer and came to the conclusion that the best option was to try and combine the frozen brocoli with the sweet potatoes and fry an egg as to me, an egg is a perfect meat replacement. I really love eggs, and could not do without them easily, to be honest, meat on the other hand, that's not that special to me. I do love a good steak, with the emphasis on GOOD lol, but I'm not a carnivore and can easily do without meat the whole week.

Eating more vegetarian

The combination turned out approved by the two of us, although my boyfriend now usually avoids sweet potatoes because he's just not that into them as much as I am. Therefore I don't often have them at home (yet), but when I made this oven dish not too long ago, it was a good reminder that I want to try out more things with sweet potatoes (like soup!). I added some garlic and leek to the dish this time, which was a nice variation for once. But what made it extra good are the eggs that taste so good here! I never found eggs this tasteful in Budapest, in the past two years. This is great for an egg-lover like myself :)

Simple process

What I do is place the brocoli in hot water boil it for a few minutes (as I'm not using fresh brocoli), cut the potatoes and other ingredients, add them to a baking tray and place them in the oven at 200 degrees celcius. For how long? I can't tell, I never set a timer as it depends on how big the veggies and potatoes are cut. Just check regularly..
