You might remember that I love banana bread

Ever since I tried baking that for the first time (even though it first failed, lol) I'm a fan! I just had to find the right recipe for our oven at the time so it seemed.
Well, I could dream of the old recipe as my daughter really loved it and requested me to bake one as soon as she saw bananas in the house. I often gave in to that because of her difficult eating habits. At least then she'd eat something. I was very happy when I had a new baking tin here in Spain and my beloved cooling rack from IKEA. What could stop me from baking banana bread? Well, trust me, I started trying the first week we moved in here, but this (to me) new oven is so different that it took much longer for the banana bread to be ready. For a while, I thought I could throw it all in the bin when I opened the oven and saw a jelly-like-looking bread, haha. Thankfully, I managed to bake it off well enough for us to eat it but the disappointment was here for sure.

Two more attempts before I got it right!

The second attempt was a bit better but still not perfect IMO. I thought I at least figured out which settings to use and mostly, which temperature, which was 220 instead of 160! But not for the full hour, nope, I tried lowering it gradually twice during the hour of baking. I will share the improved recipe that gave me the best banana bread so far, it was absolutely delicious! I hope that eventually, I figure out how to bake it at the same temperature for a full hour, but for now, I'm very happy with the result. You can check out the pictures to see how it turned out!

The Ingredients

For those wondering what I used in this recipe, here are the ingredients:

  • 125 grams of melted butter (I use real butter, unsalted)
  • 200 grams of sugar
  • 2 big eggs
  • 50 ml of milk
  • 1 teaspoon vanilla aroma
  • 2 big bananas
  • 250 grams of flour
  • pinch of salt

Instructions

This is my personal improved recipe which works with my oven, please be careful using these high temperatures and adjust it to your oven's settings if needed.

  • Preheat the oven to 220 degrees Celcius
  • Mix the sugar and melted butter
  • Add the eggs one by one
  • Add the milk and vanilla aroma to the mix
  • Add the flour, baking soda, and salt at the same time and mix it well.
  • Use a fork to mash the bananas
  • Add them to the batter
  • Cover the baking tin with baking paper
  • Add the batter to the tin
  • Bake for 15 mins at 220 degrees Celcius
  • Lower the temperature to 200 degrees and bake for 15 minutes
  • Now lower the temperature to 170 degrees Celcius for the last 30 minutes
  • Let the banana bread cool off on a cooling rack
  • Wait until fully cooled off for the best experience!

It's super simple actually just be careful with the temperature as it turns out which oven you use can make a HUGE difference :) haha

LOL, true, the simple solution is check every 10 minutes to make sure things aren't close to burning. My first 2 attempts here the temp was too low, while with my old oven, I baked it on 160 degrees and it came out perfect. I need to start with 220 degrees here. But not the full hour, then I think it would be black :)

I will keep your tips in mind. I don't want to produce an under cooked or burnt bread.
Though, I will not expect it to be perfect at first as I might be disappointed in myself. :)

My first one wasn't perfect either, but still edible :)
and the great thing about banana bread is that (unlike cakes) it stays moist enough to eat for a few days in a row. Whenever I bake a cake its not that nice anymore the next day even if I pack it well.

Two days later, it's fully gone! And my daughter was still asking for a slice this morning, it's her absolute favorite thing for breakfast :) I like it too as I don't have to think about what to put on my bread, just a slice (or two haha) will do, maybe some Nutella on top, but I try not to do that too often lol!

Would you believe it when I said I have my second cold of the summer, djeez? I blame someone in the bus ride we took on Saturday as for the rest we have not been that close to anyone or in a small room with sneezing/coughing people. Anyway, it's not that bad this time, I can still do my thing, just sleeping a little more as well.

I just opened your post with these little kittens, gonna head over there now!

Oh no! It's summer! I don't want you to miss a single day of it due to being ill, well, not that I wish you to be ill any time, but it always seems ten times worse to be sick in the summer, and two times no less! Hope you feel better fast!

And you about killed me with the whole visual of Nutella slathered on banana bread. Nutella gelato is one of my favorite things ever, as is nutella on banana bread. Okay pretty much chocolate hazelnut everything lol, but I think at this point you know I am bananas about food lol!

It makes me smile every time I think about how much your girl loves banana bread, she's like my son and pizza lol lol!
