Happy Belated Valentines Day!

I know not everyone is into that commercial stuff. It's not like I'm taking it very seriously myself as I'm all done hunting for the right guy anyway, lol. I'm set for life I guess so the Valentines hype isn't that important anymore. When I realized last week that it was Valentine's day on Monday, I booked a table at a restaurant I still want to visit, for lunchtime. When I put a note under his nose (he was in a meeting) with the request to block lunch on Monday, he soon told me it was impossible as they had a big migration coming up so all hands on deck that day. Pretty shitty but ok, we'll just go another day instead. Too bad that in the end, they haven't used his presence much that day and he was mostly waiting. We could've been out for lunch easily. Too bad you can't always predict that stuff.

Surprise For Daddy!

I found ready-to-use Gingerbread dough at the Ikea after I had been struggling a bit again making the dough myself, sometime before Christmas, I totally forgot about it until last week. I saw the expiration date was just after Valentine's day and reading that I told my daughter and said we are going to bake cookies soon.

The little smartass had decided that we were going to make them for daddy as a surprise!
I agreed and when daddy was working, we were baking in silence! He was in the home office most of the day, so this wasn't too hard. When we were done, she decided to craft 2 Valentine's cards, one for me and one for daddy. She came to both of us to ask (with a soft voice so the other wouldn't hear it!) if we could write down the message for her. And so we ended up getting a custom made card, and daddy some decorated cookies by his daughter.

The Cookie Baking & Decoration Process

As I mentioned above, I didn't use my normal Gingerbread dough recipe as last time I was quite done with it, I just don't like it when the dough is too dry, then too wet, it's usually a bit of a pain. So when I found it ready to use at Ikea, I didn't hesitate for a second. But unfortunately, I totally forgot about having it and it was left unused almost until the expiration date. You can find plenty of recipes online though, all following their own personal recipe, and I just haven't found the one yet.

I baked them for 15 minutes at 175 degrees Celcius.

Quite a lot of them, but I didn't decorate them all! Too much sugar haha. I just wanted to make sure the dough would not be left unused.

Time for the icing. No measurements anymore this time. Just plain old powdered sugar, a bit of water and most important: food colouring! I just mixed it on the flow and thankfully, this time it was thicker and didn't take two days to dry completely.

We did have to be quick though, as I noticed looking at the first cookies without decorating, that the icing was drying faster than I expected.

The End Result

Of course, my daughter did an excellent job at decorating the cookie icing, she was really focused on not spilling too many sprinkles and other decorations as I explained to her that the icing was already very sweet without the decorations. I loved seeing how she tried really hard to divide the decoration over the cookies just the way she wanted them to look.

The one with everything on it was called the "rainbow" cookie and she made an extra one with that design, one for her and one for daddy. I personally prefer without the decoration, so I told her she could have mine, which she obviously didn't say no to!

Although the cookies weren't anything special recipe-wise, we did have loads of fun making them and the thought behind it counts as well. So even though we had nothing planned on Valentine's day, we ended up having a cool one either way!

Your daughter did such an awesome job decorating those heart cookies, I mean dang, the sprinkles are so precise! I'm super impressed!
