The hearty crab soup noodle( Vietnamese cuisine ).

Hello everyone!, Hi friend in #foodiesbeehive community! Today, I would like to share the recipe for the undefeated western noodle soup, I have gained experience after cooking more than a dozen pots 😂 In Vietnam, almost this dish appears in all the alleys and streets from restaurants to small stalls selling roadside food, to small markets, from the countryside to city. It is closely related to the life of the people in my hometown. It is also a famous dish that tourists to Vietnam must try.

Ingredients (serving for 6 people)
500g crab
6 pork bones
2 pieces of pig blood
1 blow of sausage
Fresh vermicelli
Grated water spinach
Grated banana corn
Price
About 10 dried shrimps
1 handful of dried shrimp
2 dried squid
2 duck eggs
1 cassava
1 carrot
Cashew
Coriander
Red onion, garlic, lemongrass
😘 Spices
Salt
Street
MSG
Seasoning seeds
Fish sauce
Fish sauce

How to do it:

Clean the crab, leave the brick part in a separate cup, then grind and comb the meat (when grinding, add a little salt), but the crab part in the pot, season with a little sugar, salt, seasoning, fish sauce, and then bring to a boil. Bring it to a boil to get the crab sauce

Coloring cashew oil:

Add cashews to the color of cashew oil
Take out the cashews, add the garlic and onions and fry until fragrant, then add the crab bricks and stir-fry then turn off the heat

Make crab cakes:

Step 1:
After the crab has floated, we take it out into a bowl, use a spoon to squeeze it to remove the excess water.
Step 2:
Separate the whites and yolks of 2 duck eggs
Add the whites into the crab sauce and mix well with the sugar, seasoning, and fish sauce.
Step 3:
The yolk part we put half of the oil color is just done in the step 🏵️ above, mix well and season with a little fish sauce.
Step 4:
Apply the yolk on the crab cakes and steam it for about 15-20 minutes.

Prepare pig blood:

Step 1: Wash pig blood with salt
Step 2: Boiling water
Step 3: Boil pig's blood to eliminate odors

Cooking broth:
Pork bones are washed with salt, boiled in boiling water to eliminate odors, and then put in a pressure cooker for water, purple onions, and salt in the stew for 45 minutes to produce fresh water.
After the pork bone stew is finished, pour the bone broth into the original crab broth
We put 5 tomatoes in the pot, leaving 1 raw
Continue to put in
Grilled squid
Dried shrimp
Aromatic roasted dried shrimp
Cassava roots cut long
Pruned carrots
Pig blood
After 5 tomatoes are soft, we take them out and pour water into the pot
Put half of the color you have left in it
Season in the broth with salt, sugar, seasoning, fish sauce, and fish sauce to taste

** How to stir-fry fish sauce:**
Put cooking oil in a pan of hot oil for minced lemongrass, garlic, and chili peppers and fry until fragrant.
Add fish sauce to a little water, add a little MSG and sugar to the island, then turn off the stove, then the dipping sauce is finished.

## Finished product decoration:

Put shaved water spinach, grated banana, rack below the bowl, put the vermicelli on, put the spring rolls, crab cakes, pork blood, pork bones, add broth on top of the vermicelli once to cook the vegetables and make the vermicelli more flavorful. Change the broth and then add sliced ​​tomatoes and sprinkle finely chopped coriander leaves to finish, serve with fish sauce, squeeze in a little lemon and add a little chili, it's delicious!
