Refreshing and easy to make dessert: Buko pandan

Creamy, sweet, and refreshing

An out of the blue craving for something sweet can really be an "emergency" for people like my family who loves eating dessert after a good meal. Good thing is that my momma always have a stock of dairy products that can be considered as basic ingredients for making desserts. A quick option is to make Buko Pandan!

Ingredients:
  • Coconut strips
  • Buko pandan flavoring
  • Powdered gelatin
  • Condensed milk
  • All-purpose cream
  • Vanilla extract
  • Tapioca pearls
To make the gelatin, mix water, buko pandan flavoring, and powdered gelatin in a container. Stir the mixture until everything is evenly distributed. In another container, add hot water into the mixture and continue stirring.

Pour the mixture into a square mold and let it cool until it forms into soft gelatin. This will be cut in cubes later and will be added to the milk concoction.

In a big container, mix the condensed milk, all-purpose cream, vanilla extract, and coconut strips. We also added buko pandan flavoring in this mix which turned it to color green. The tapioca pearls are optional, since this was an impromptu making of dessert for lunch, we didn't have much time to buy pearls.

Once the gelatin is ready, [you can also put it in the fridge to cool] cut it to cubes and add it to the mixture of condensed milk, cream, and coconut strips. You can add ice cubes or crushed ice on each serving to make it cooler and more refreshing. Enjoy! :)

Usually, I use "agar powder" instead of gelatin :)

That looks fresh and yummy :)
