Layered savory pancake - a crunchy goodie [ENG/ESP]

Panqueque salado en capas


Hello, bees!!! A warning before you keep going. This tastes delicious but has a lot of fat involved in its making, so proceed with caution. Great to people who need to gain weight tho.

I'm trying to learn about different types of layered bread, this is one of those, maybe the easiest because it doesn't need refrigeration or proofing time, but it shows the foundation of what we are looking for: how to form the layers and what the layers mean to the flavor.

¡Hola, abejas! Una advertencia antes de seguir. Esto sabe delicioso pero tiene mucha grasa en su elaboración, así que procedan con precaución. Aunque sí es genial para las personas que necesitan ganar pesoo.
Estoy tratando de aprender sobre los diferentes tipos de pan de capas, este es uno de ellos, tal vez el más fácil porque no necesita refrigeración ni tiempo de fermentación, pero muestra la base de lo que buscamos: cómo formar las capas y lo que las capas significan para el sabor.

Flour200gr
Salt1/2 tbsp
Water3/4 cup
Sunflower or olive oil1/2 cup
Melted butter1/2 cup

Mix all the dry ingredients and add the water gradually beating with a fork until the bowl is clean. Knead for about ten minutes and let it rest for 15 minutes. Use more flour to work on the table if you need it.

Divide the dough into four pieces and let it rest again while you melt some butter. Add flavor to it, I used pepper and fennel.

Mezclar todos los ingredientes secos y añadir el agua poco a poco batiendo con un tenedor hasta que el bol quede limpio. Amasar durante unos diez minutos y dejar reposar durante 15 minutos. Utiliza más harina para trabajar en la mesa si lo necesitas.

Divide la masa en cuatro trozos y déjala reposar de nuevo mientras derrites un poco de mantequilla. Añádele sabor, yo usé pimienta e Hinojo.

Spread oil on the surface you are working with, extend the dough with your hands, adding more oil and melted butter, the dough has to be slippery and well coated. Extend to form a rectangle, spring with flour and cornstarch, fold the sides to the middle, add more butter and oil, flour, and cornstarch, fold again, until you have a small rectangle with many layers. Let it rest while you make the same process with the other dough.

Once you are ready, extend with your hands or a rolling pin, if the dough doesn't stay stretched enough, let it rest a bit more and extend again. The dough doesn't need proofing but does need to relax. Cook on a pan, without adding more oil, we used a lot and it should be very wet. Cook each side for about two minutes. If you put a lid, just at the beginning, the steam separates the layers even more.

Untar con aceite la superficie con la que se trabaja, extender la masa con las manos, añadiendo más aceite y mantequilla derretida, la masa tiene que estar resbaladiza y bien recubierta. Extiende hasta formar un rectángulo, salpica con harina y maicena, dobla los lados hacia el centro, añade más mantequilla y aceite, harina y maicena, vuelve a doblar, hasta que tengas un pequeño rectángulo con muchas capas. Déjalo reposar mientras haces el mismo proceso con la otra masa.

Una vez que esté listo, extiende con las manos o con un rodillo, si la masa no queda lo suficientemente estirada, déjala reposar un poco más y vuelve a extenderla. La masa no necesita ser fermentada pero sí relajarse. Cocinar en una sartén, sin añadir más aceite, hemos utilizado mucho y debe estar muy húmeda. Cocinar cada lado durante unos dos minutos. Si se pone una tapa, solo al inicio de la cocción, el vapor separa aún más las capas.

When they are fully cooked they don't keep the air between layers but they have that separation, each layer cooks with its own fat so they have more crunchy areas. The cornstarch helps to keep that texture. Fat is a great conductor of flavor which makes this pancake very easy to garnish. I added more melted butter and chopped coriander and were good to go. So delicious.

Cuando están completamente cocidos no mantienen el aire entre las capas sino que tienen esa separación, cada capa se cocina con su propia grasa por lo que tienen más zonas crujientes. La maicena ayuda a mantener esa textura. La grasa es un gran conductor del sabor lo que hace que este panqueque sea muy fácil de adornar. Yo añadí más mantequilla derretida y cilantro picado y listo. Muy rico.

This will be good for me. I need to add a little weight and it looks delicious 😋😋.

Yeah! In my family, my mom, sister and I, just ate half each... my dad is the only one that has to put on weight, actually, he was told to add two tbsp of oil to all of his meals, so this one does that and doesn't compromise the taste of the food.
