Rice based Gluten-free cake [ENG/ESP]
Torta de arroz, libre de gluten
Hello! This is not the first time I try a rice based cake but this one is way better than my last try, its texture is more spongy and it does have butter and milk, so it tastes better. It's not vegan but it's good for people with gluten allergies.
Hola!
The main ingredient is rice, which we will leave soaking the day before, 400gr of rice in 3 cups of water, when we are going to prepare the cake we strain it, rinse lightly and strain again, we take out all the water from the soaking. Everything is done in a blender, so it is important to have all the ingredients at hand already weighed and ready to put them in.
4 eggs, 330gr of sugar, 100gr of margarine, 1 cup of milk, 1 tablespoon of baking powder, 1/2 teaspoon of salt, vanilla and orange zest.
Put the eggs and sugar into the blender, blend for 2 minutes, then add the margarine and blend for another minute, then add the rice and milk in parts (if your blender is big and powerful, you can add everything), blend for 5 minutes and finally add the vanilla, baking powder and orange zest, blend for a few more seconds. The mixture will be quite liquid and the texture will be quite smooth, without lumps or pieces of rice.
Pour the mixture into a greased and floured mold, it will go into a preheated oven at 180°C. We do not always know the temperature of the oven or if it heats as it says it does, mine does not. So it was medium to low heat for 1 hour and 30 minutes for me, but in a different oven at 45 minutes it is time to be ready to remove it.
Its consistency is like a pancake.
