White seed-melon vegetarian soup recipe |with cassava dough,delicious finger licking delicacy

Hello friends I would love to share with you all how white-seed melon soup know as (egusi soup) in Africa and is mostly popular among the people of western Africa especially in Nigeria is prepared and enjoyed with different kinds of stirred food ..

so if you would like to know how to prepare this finger licking soup to enjoy keep on reading.

-Note that this soup i am preparing is for vegetarians as you are going to see that no kind of meat was used in the preparation of the soup.

  •ingredients used in preparation 

-Ingredients in the picture above

*blended white-seed-melon (egusi)
*sliced pepper guineense leaf
*palm oil
*fresh peppers
*blended cray fish
*blended achi seed (thickener)
*cow -skin
*stockfish
*dried blended pepper

        •Other ingredients added

*salt
*seasoning cubes

        •steps for preparation 

Remember that the Quantity of ingredients to be used in preparation depends on the number of servings you are preparing ...

•1 Add palm oil into pot on low heat ...leave to heat for life three minutes after that go ahead and add some salt (a teaspoon) and leave to heat for another two minutes

•next add the already washed and sliced stockfish and cow skin to the oil

•after that add two seasoning cubes and the grated fresh peppers

In the next step add some water in the pot and leave to boil for 15 minutes(the amount of water you add depends on the quantity of blended whites melon seeds you are preparing ).

Now go ahead to mix the blended achi seed (thickener) with little water.....achi seed is a soup thickener which can be used in various other African soup to thicken it .after diluting with water add the mixture to the boiling water .

In the next step you want to ahead and add the the egusi to the boiling mixture and covered to cook for another 10 minutes.

After 10 minutes add the piper guineense leaf and leave to boil again for about 10 minutes

And this is the result of how it looks like after cooking .....

This soup can be enjoyed with different grain dough food, in the picture below i decided to enjoy with fermented and “fried cassava grain” (called garri in Nigeria)stirred with some hot water .
