If you were starving to death...
Human flesh? I don't think so. I would rather throw myself into abandonment until I weaken and die of starvation, if there is no other option. I am very good at immobilizing my body consciously when I want to. Waiting for the only thing I am sure of, that is, death, in complete inaction, knowing that there is not much left to do, seems sensible to me.

Although I don't know if after a certain period of starvation my instincts would betray my common sense, so far I have never reached that extreme and I hope it never happens.
A few times in my life, I have fasted for one day, and recently I fasted for two days during which I only drank water. I needed a lot of rest since it is not something that is part of my lifestyle. I have done it on occasion, consciously, with the intention of cleansing my body, and then I realized that this action can also help with self-control, as it can strengthen the will.
I should note that I am speaking from my own experience and am not saying that fasting is a good thing. If anyone wants to do it, I recommend that they research it thoroughly and consult with their trusted doctor, if they trust doctors.
I remember when I tried fasting for the first time, I spent the day in my room just drinking water when I felt the need. It was almost 9 o'clock at night and my sister-in-law, the wife of one of my brothers, who lived in the same house at the time, called me and brought me a plate of pasta with fried chicken. What a temptation! Even though I told her I didn't want it, she insisted, and I was embarrassed to refuse her, especially since she didn't know about my fast.
I found a container with a lid and put the food away with the intention of eating it the next day. The result: within a few minutes, the temptation of the smell of fried chicken was so great that my fast that day failed 😅
So I'm not entirely sure if, in an extreme situation where cannibalism is the only option, I would succumb to the need or desire to eat, or if, as I think and feel now, I would not do it for anything in the world, much less if I had to kill someone or watch someone else do it, which is out of the question for my current conscience.
Now, moving on to a related topic, I have recently seen some YouTube videos in which some people claim to be able to live for days, even months, without eating or drinking anything. I am not going to post any links here because I do not intend to recommend this. In fact, many of these videos say that these practices require a lot of preparation well in advance and that some who have tried it have died, while those who have done it with all the necessary preparation become like superhumans who feed only on the sun, air, and breath, demonstrating that food is, according to these testimonies, which may or may not be true, a human desire that is in our programming and that, in addition, we are increasingly programmed to consume more, even though we know that much of what we eat is harmful to our health.
I think that being able to live without eating or drinking is pretty crazy and contradicts a lot of things, but... What if it were true? Or if the only option for survival were a horrible and undesirable situation of cannibalism, I would take advantage of trying out those ideas of not eating or drinking. Result: Either I die insane, or I hasten my death, which is inevitable anyway... Who knows... Or I become the superhuman who feeds on the sun.

I believe it's important to eat to live...in that order. Regarding fasting, there are some interesting things out there...but I find it best to eat light at night for two reasons: diet, and taking care of my stomach. As for cannibalism, almost all of us would flatly refuse to do it. The problem is that it's only a matter of evaluating it in an extreme situation... From this position, we would all avoid it, we might even swear to keep our word, but would we react that way if we went to extremes? I don't know, Rick. I'd rather not find out.
Would we be less human?
I don't want to know either. And well, there are extreme people who starve themselves for certain reasons, even claiming to have no desire to eat. In a situation like the one described, it's totally different, but well, we're not there and we won't be there, I've already decreed that 😊
As for your question about whether we would be less human, in my view, in an extreme situation, someone who resorts to cannibalism would only be fighting for their survival, an innate human instinct.
Only if we lived in that extreme would we understand it...

Well, the first time was fun, because it was a huge temptation that I couldn't resist at the time.
And really, as you say, it takes a lot of discipline and willpower to control basic instincts, so in an extreme situation, it's hard to say for sure what we would do.
