Preparation of chickpea cheese served with arepa and salad [Eng/Esp]

I greet you, wishing you well.

Today I want to share how I have prepared a chickpea curd that by its shape can resemble cheese and depending on the ingredients we use it is even possible to emulate its flavor to a great extent.

The one I have prepared does not have the flavor of cheese but it is very tasty and ideal for spreading on our vegan breads and crackers or arepas, which is a food that is widely consumed in Venezuela.

El día de hoy quiero compartir como he preparado un cuajado de garbanzos que por su forma puede asemejarse al queso y que dependiendo de los ingredientes que utilicemos es posible incluso emular su sabor en gran medida.

El que he preparado no tiene el sabor propio del queso pero sí que está muy rico e ideal para untar a nuestros panes y galletas veganas o las arepas, que es un alimento que se consume mucho en Venezuela.

So I prepared my vegan "cheese" and used it this morning to fill my arepas and complete a delicious breakfast along with other ingredients.

I'm going to share how I prepared it and I'd love for you to join me.

Ingredients for the chickpea cheese

  • 1 Cup of chickpeas previously soaked in enough water and washed. (It is enough to soak 1/2 cup so that you get a cup after soaking).
  • 2 cups of water.
  • 1 tablespoon of lemon juice.
  • 1 teaspoon salt.
  • 1/4 onion.
  • 1 large garlic.
  • A couple of drops of oil to spread on the pan.
  • Oregano to taste.
  • Ground garlic to taste.

Así que preparé mi ❝queso❞ vegano y lo he usado esta mañana para rellenar mis arepas y completar un desayuno delicioso junto a otros ingredientes.

Voy a compartir como lo he preparado y me encantaría que me acompañaras.

Ingredientes para el queso de garbanzos

  • 1 Taza de garbanzos previamente remojados en suficiente agua y lavados. (Basta con remojar 1/2 taza para que obtener una taza luego del remojo.)
  • 2 Tazas de agua.
  • 1 Cucharada de jugo de limón.
  • 1 Cucharadita de sal.
  • 1/4 de cebolla.
  • 1 Ajo grande.
  • Un par de gotas de aceite para untar al molde.
  • Orégano al gusto.
  • Ajo molido al gusto.

Preparation

Blend the cup of chickpeas, previously soaked and washed, with the water and the rest of the ingredients. We do it until all the ingredients are well integrated, for about 2 minutes, taking breaks in the blender so as not to force it and to extend its useful life.

Licuamos la taza de garbanzos, previamente remojados y lavados, con el agua y el resto de los ingredientes. Lo hacemos hasta integrar muy bien todos los ingredientes, como por 2 minutos aproximadamente, haciendo descansos en la licuadora para no forzarla y alargar su vida útil.

Bring the mixture to a saucepan and then over medium heat, cooking and stirring constantly so it does not burn until it begins to boil. In my case it took about 8 minutes.

Pour the mixture into the previously greased mold and wait for it to cool. Cover and refrigerate for a minimum of 2 hours.

Llevar la mezcla a una olla y luego a fuego medio, cocinando y removiendo constantemente para que no se queme hasta que comience a hervir. En mi caso fue alrededor de 8 minutos.

Verter la mezcla en el molde previamente engrasado y esperar que enfríe. Tapar y refrigerar por un mínimo de 2 horas.

After this time we can serve our chickpea cheese.

Pasado ese tiempo podemos servir nuestro queso de garbanzos.

  • 2 cups of water.
  • 1/2 cup of precooked corn flour.
  • 1 pinch of salt.

Yo preparé un par de arepitas pequeñas de maíz precocido y para ello usé los siguientes ingredientes:

  • /2 Taza de agua.
  • 1/2 Taza de harina de maíz precocida.
  • 1 pizca de sal.

Preparation of the arepas:

The secret of a good arepa is in preparing a good dough. I remember that before I had some little balls of dough when I added the flour first and then the water, although some people do it this way and have an excellent result, as is the case of my mother, I have not learned to master this art and I first add the water, salt, stir and then gradually add the flour and I integrate with a fork or with clean hands until I get a soft but well integrated dough. If it suddenly hardens a little, I add just a few drops of water and continue kneading. This way the dough is perfect.

Preparación de las arepas:

El secreto de un buena arepa está en preparar una buena masa. Recuerdo que antes me quedaban algunas pelotitas de masa cuando agregaba primero la harina y luego el agua, aunque algunas personas lo realizan de este manera y tienen un resultado excelente, como es el caso de mi madre, yo no he aprendido a dominar ese arte y agrego primero el agua, la sal, remuevo y luego poco a poco agrego la harina y voy integrando con un tenedor o con las manos bien limpias hasta obtener una masa suave pero bien integrada. Si de pronto se endurece un poco, agrego tan solo algunas gotas de agua y continúo amasando. De esta manera la masa me queda perfecta.

I put the budare to heat and spread it with a few drops of oil. I divided the dough in 2 and made a couple of balls that I then flattened with my hands to shape the arepa.

Coloqué el budare a calentar y lo unté con unas gotas de aceite. Partí la masa obtenida en 2 e hice un par de bolas que luego aplané con las manos para darle forma a la arepa.

Cook on both sides over medium heat for approximately 8 to 10 minutes on each side.

Cociné por ambos lados a fuego medio por un laso de 8 a 10 minutos aproximadamente cada lado.

While the arepas were cooking I sliced a medium tomato and a few pieces of avocado, added a pinch of salt and used this salad to fill the arepas along with the chickpea cheese.

Mientras las arepas se cocinaban corté en rodajas un tomate mediano y unos trocitos de aguacate, agregué una pizca de sal y usé esta ensalada para rellenar las arepas junto con el queso de garbanzos.

I had a delicious breakfast this morning.

Tuve un delicioso desayuno esta mañana.

chickpeas in your country and mine are different. In my country, chickpeas in my country are green vegetables, a type of legume that is cooked as a vegetable.

Here chickpeas are usually cooked and require a lot of cooking to soften, I do not know if we are talking about the same food but with a different name and species.

They can also be prepared raw for some recipes, although in this case they are not totally raw as they are somehow cooked a little.

Well done for replace the cheese with chickpea ingredients. I often saw similar recipe too 😊 that's great for vegan people to use cheese in plant based version.

You can add nutrition yeast to create better flavor as well

He hecho quesos vegetales pero el de garbanzos hasta ahora no! Este quesito tiene la pinta que me gustará y más aún con los esos acompañantes: -mis favoritos- la arepa y el aguacate… ya le di un mordisco a esa arepa 🤭😋
