Fancy scrambled eggs & turkey breast

Last night we went to a small party. Wine was served & yummy appetizers (fine cheeses and exotic dips and fancy spreads). It was fun to get out of the house and mingle, but I went to sleep a little hungry and woke up hungrier.


This called for brunch-y scrambled eggs with a side of Turkey breast.

First, I sauté my vegetables: peppers, onions, tomatoes & sprinkle rosemary on top. Then I add 8 eggs (we have guests) mixed with a splash of milk & two types of cheese : Gouda & goat with cranberries.

I add green spices to the mix and serve with a pickle, pesto and garlic spread… 😋

Now, comes the Turkey.

I marinate the lean, high protein bird meat in plenty of lemon juice, olive oil and spices and pop it into the air fryer, for 20 minutes.

After 10 minutes I check up on it and turn it over for another 10 minutes, while preparing my sides: quinoa and a nice big salad 🥗

The rest is… well, digesting in my stomach. Time for a siesta 😴 💤
