Ajiaco: Colombian chicken soup
Today, was a good day. We had some friends over to the farm for lunch & served a fancy soup that it typical to Bogota (the way Sancocho is to Medellin).
This was a labor intensive meal, and so we started early, assembling our ingredients,boiling chicken and potatoes as well as chopping and dicing : onions, garlic.
Corn gives it a sweet flavor as does the fresh cream that is added towards the end. And, the ever present avocado was represented in the form of guacamole, which you also add to your finished bowl.
As the saying goes (in Arabic) the eyes eat first and this elaborate chicken soup is as much a feast for the eyes, with its varied palette of colors and textures, as it is for the stomach.
