Fresh and healthy: Eggplant Omelette with sliced tomatoes.

Hello lovely hivers and hello foodies bee hive community. I hope you are all doing well today 🌸

One of the advantages of living here in the province is you can always eat freshly harvested vegetables and fruits especially when you planted some on the backyard. I am one of the people who really appreciate freshly harvest vegetable and the natural sweetness the they gave on the recipe.

Earlier I cook some eggplant omelette for our lunch. It's been three days since I bought these eggplant from the friend of my mother. I was walking going to the vegetable vendor near our house when she saw me and ask me to buy some fresh harvest eggplant for only 30 pesos per kilo. I bought 1 kilo of eggplant but didn't cook it on that day because I am craving for some food with soup that day.

I decided to cook it now because if I will not cook it I'm sure it will became waste and throw on up to next few days.

Eggplant omelette is easy to cook and we only need three main ingredient , the eggplant, egg and cookimg oil for frying. Eggplant omelette is a Filipino dish wherein you will grill the whole eggplant and then cook it together with the egg.

Here's the eggplant and egg. I only cook 2 pieces for me and my husband.

Grilling the eggplant and peel it.

You can choose where do you like to grill the eggplant. As for me I grill it directly to our stove because we don't have griller. After the eggplant was grilled, wait until it cool down and peel the skin and spread the eggplant like this. Maybe your asking why it need to do this? It is because sometimes eggplants here in the Philippines has some organisms inside so we need to check it first before cooking.

Prepare some egg and add salt , pepper and oyster sauce. Oyster sauce and pepper are optional guys , it's okay if you will only add salt as it's the common add ons on the eggplant omelette.

For some people who wants to have an extra especial eggplant omelette they are adding some ground pork , onions and tomatoes into it.

Put the eggplant into the egg mixture and coat it until its fully covered with egg mixture.

Fry in the low heat and flip once the other side is cook and just repeat the process on the next eggplant to cook.

If there's one thing I'm scared to eat, then it's eggplant and I don't even know why. But seeing this recipe is making me crave for one.
