Banana and Oat Arepas (Eng/Esp)

English version

A nutritious and delicious breakfast is just what you need to start the day off right, so I decided to make some banana and oatmeal arepas—two healthy ingredients that add a lot of flavor to meals. This time, I made this recipe a little differently, and today I’m sharing it with you.

Ingredients:

  • 2 bananas
  • 100 grams rolled oats
  • 2 tablespoons sugar
  • 150 grams cornmeal
  • Pinch of salt
  • 2 cups water
  • Oil

Preparation:

I peeled the bananas and cut them into large chunks, then put them in the blender along with two cups of water. I also added the rolled oats at this point; I wanted them to be completely blended.

When the mixture was ready, I transferred it to a deep bowl, added the sugar and salt, and then poured in the cornmeal. I mixed everything thoroughly until I achieved the perfect consistency for shaping the arepas.

I greased the surface of the budare and placed the four arepas on it. In twenty minutes, they were ready, with a slightly crispy crust—just the way I like them.

I topped it with butter and cheese; I love that combination of sweet and salty in an arepa, especially when the cheese melts and forms a delicious, stretchy layer. The last thing I did was make myself a cup of strong black coffee, and I was satisfied.
