Beet, Potato, and Carrot Salad with a Touch of Lemon (Eng/Esp)

This time I decided to have an unusual breakfast; I wanted to make something different that wasn’t the usual arepas or, failing that, bread—although I have to admit that I love bread with coffee; it’s one of my weaknesses. So I decided to make a salad with beets, potatoes, and carrots.

Ingredients:

  • 4 beets
  • 4 potatoes
  • 1 large carrot
  • 2 tablespoons of mayonnaise
  • 1 lemon
  • Salt to taste
  • 1 liter of water
  • Oil

Preparation:

I washed the vegetables and peeled the carrots, potatoes, and beets.

Then I cut them into small cubes and placed them in a pot with one liter of water. I used a fork to check that all the pieces were tender; I did this after about twenty minutes.

The beets changed the color of the potato and carrot pieces; I did it this way to save water, although I don’t mind the purple color.

I waited for it to cool, then used a strainer to remove the excess water. I transferred it to a bowl, added a few drops of lemon juice, mayonnaise, and salt to taste.

The last step was to enjoy this delicious treat.

Esta vez opté por un desayuno fuera de lo común, quería preparar algo diferente que se alejara de las convencionales arepas o, en su defecto, del pan, aunque he confesar que me encanta el pan con café, es una de mis debilidades. Opté entonces por realizar una ensalada con remolacha, papas y zanahoria.

  • 4 remolachas
  • 4 papas
  • 1 zanahoria grande
  • 2 cucharadas de mayonesa
  • 1 limón
  • Sal al gusto
  • 1 litro de agua
  • Aceite

Preparación:

Lavé los vegetales y retiré las conchas de la zanahoria, las papas y las remolachas.

Luego corté en cuadros pequeños y llevé a una olla con un litro de agua. Corroboré con un tenedor que todas las piezas estuvieran blandas, verifiqué esto cuando habían pasado unos veinte minutos.

Las remolachas cambiaron el color de los trozos de papas y zanahoria, lo hice de esta forma para ahorrar agua, aunque el color morado no me desagrada.

Esperé que enfriara, pasé por un colocador para retirar el exceso de agua. Llevé a un envase, agregué unas gotas de limón, la mayonesa y sal al gusto.

El último paso fue disfrutar de esta delicia.
