Chorizo Stew with Plantains (Eng/Esp)

My lunch today was light; I decided to sauté smoked chorizo with onions, bell peppers, and red bell pepper, and served it with boiled plantains—a delicious combination that captivated my senses. I also liked how easy this recipe was to make; it took very little time, and I ended up with a truly exquisite dish.

Ingredients:

  • 1 smoked chorizo
  • 3 onions
  • 6 sweet peppers
  • 1 red bell pepper
  • Plantain
  • Pinch of salt
  • 2 1/2 cups of water
  • Oil

Preparation:

When I take charge of the kitchen, I like to organize my utensils and ingredients; that way, I enjoy the process and creating appealing aromas and textures. First, I selected and washed the herbs, then I removed the seeds from the chili peppers and the bell pepper. I diced everything.

Next, I peeled the onions and chopped them into pieces. I also washed the smoked chorizo and sliced it.

The next step was to slice the plantain with its skin on and parboil it in two cups of water. It was ready in ten minutes. I turned off the heat and waited for it to cool before peeling off the skins.

At the same time, I heated a skillet, drizzled in a little oil, and added the seasonings. When they turned translucent, I added the chorizo and adjusted the salt to taste.

Finally, I added half a cup of water; I wanted the stew to have plenty of sauce to bring out the smoky flavor, which I find quite pleasant.

Mi almuerzo de hoy fue ligero, opté por guisar chorizo ahumado con cebollas, ajíes y pimentón, además acompañé con plátano sancochado, una deliciosa combinación que cautivó mis sentidos. Preparación:

Cuando tomo el control de la cocina me agrada organizar utensilios e ingredientes, así disfruto del proceso y de crear atractivos aromas y texturas. Primero seleccioné y lavé los aliños, luego quité las semillas de los ajíes y el pimentón. Todo lo corté en cuadritos.

Posteriormente, quité las conchas de las cebollas y piqué en pedazos. También lavé el chorizo ahumado y lo corté en rodajas.

El siguiente paso fue picar el plátano en rodajas con su concha y ponerlo a sancochar con dos tazas de agua. En diez minutos estaba listo. Apagué y esperé que se enfriara para retirar las cáscaras.

De forma paralela monté un sartén, eché un chorrito de aceite y agregué los aliños, cuando observé que se transparentaron, añadí el chorizo y ajusté el punto de sal.

Finalmente agregué media taza de agua, quería que el guiso quedara con suficiente salsa, para aprovechar el efecto del sabor ahumado, que para mí gusto es bastante agradable.

El último paso fue servir en un plato y disfrutar de esta delicia, me encantan las recetas sencillas y llenas de sabor.
