Pea soup with beef and vegetables.

Happy Tuesday to all my food-loving friends! I hope you’re having a great day and staying healthy. In my country, there’s been a very strong viral infection going around lately, accompanied by high fever, headaches, and general malaise; At home, a few days ago my husband got sick, then my youngest son, and now my oldest son—which has required a lot of care and, of course, making plenty of soups, hehe. I’ve made chicken soup, lentil soup, and beef bone soup; and this time, I made my oldest son a pea soup with chunks of beef and some vegetables, since many vegetables aren’t in season during the winter.
I’ll show you how I made this delicious broth, which is perfect for those days when you’re feeling under the weather, since it helps you recover quickly.

Para seis porciones:
300 gr de carne de res en bistec
300 gr de arvejas
400gr de auyama
3 papas
2 plátano verde
1 rama de cilantro
1 cebolla
4 ajíes
4 dientes de ajo
1 cubito de caldo de pollo deshidratado.
Makes six servings:
300 gr beef steak
300 gr peas
400 gr pumpkin
3 potatoes
2 green plantains
1 sprig of cilantro
1 onion
4 chili peppers
4 cloves of garlic
1 cube of dehydrated chicken bouillon.

In a pot, I brought about 4 liters of water to a boil. Meanwhile, I washed the peas very thoroughly. Since peas are easy to cook—that is, they’re quite tender compared to black beans or bayo beans—once the water came to a boil, the first things I added were the peas and the squash. I always add them first because I don’t like eating them in chunks; I like them to dissolve completely into the soup, adding only flavor and a bit of color, so that all the vitamins in this vegetable remain in the soup. I also added half the cilantro right from the start because I really like the flavor it imparts to soups. I let it boil for a while as the meat tenderizes.

Next, I peeled the plantain, washed it thoroughly, cut it into pieces, and added it to the pot. I set aside half a plantain, grated it using the coarse side of the grater, and added that as well—this is to thicken the soup a bit, sort of like a grandma’s trick.
I kept tasting it for salt. Since I wanted to make the broth as natural as possible, I didn’t add any oil or additives—the only chemical additive I used was the dehydrated chicken broth.

Finally, I washed the onion and the chili pepper and cut them into pieces; I added them to the broth just as they were. I didn't sauté them in onoto because, as I told you, I wanted to make the broth as natural as possible.
I finished it off with another sprig of cilantro, let it boil for about 2 minutes, and removed it from the heat.
