Tradicional arepas de maíz - Traditional corn arepas

En nuestro país se elaboran las arepas en distintas presentaciones para su consumo, se pueden hacer asadas, horneadas o fritas con harina de maíz pre cocida o con maíz trillado o completo previamente molido, de la forma que se consuma es un plato tradicional de nuestro país que en ningún hogar falta. No hay duda que una buena arepa de maíz no la desprecia nadie, el sabor es diferente, su preparación lleva unos pasos que debemos cumplir, para poder obtener una buena masa que permita elaborar una rica arepa.
In our country arepas are made in different presentations for consumption, they can be roasted, baked or fried with pre-cooked corn flour or corn flour previously milled or whole, however it is consumed is a traditional dish of our country that no home lacks. There is no doubt that a good corn arepa is not despised by anyone, the flavor is different, its preparation takes some steps that we must fulfill, in order to obtain a good dough that allows to elaborate a rich arepa.

La preparación de una nutritiva arepa de maíz, tiene unos pasos a seguir, hasta lograr la masa acorde para alcanzar la consistencia necesaria y obtener unas buenas arepas, a continuación le explicare los pasos a seguir:
The preparation of a nutritious corn arepa, has some steps to follow, to achieve the dough according to reach the necessary consistency and obtain good arepas, then I will explain the steps to follow: En primer lugar se debe seleccionar unos granos que muestren un claro aspecto de limpieza, libre de grumo los cuales serán adquiridos en los expendios comerciales dedicados a la venta de variedades de granos, en este caso se debe adquirir un buen maíz pilado.
First of all, it is necessary to select grains that show a clear aspect of cleanliness, free of lumps, which will be acquired in the commercial outlets dedicated to the sale of varieties of grains, in this case, a good piled corn must be acquired. Se debe proceder a lavar el maíz para eliminar los grumos y partículas de conchas que por lo general vienen adheridas en el maíz trillado, este procedimiento se repite en varias oportunidades para asegurar una buena limpieza; seguidamente se colocará la olla con suficiente agua y la cantidad de maíz que se va a sancochar durante una hora aproximadamente. Debemos estar pendiente de mover el maíz con una paleta con regularidad durante el tiempo de cocción, para que el grano se afloje. Una vez sancochado se debe dejar reposar el maíz, luego se procede a lavarlo y colarlo.
The corn should be washed to eliminate the lumps and particles of shells that usually come attached to the threshed corn, this procedure is repeated several times to ensure a good cleaning; then place the pot with enough water and the amount of corn to be parboiled for about an hour. We must be aware of moving the corn with a paddle regularly during the cooking time, so that the grain is loosened. Once parboiled, the corn should be left to rest, then it is washed and strained. Inmediatamente procedemos a preparar la mesa donde colocaremos el molino y los demás utensilios para moler los granos hasta obtener la masa.

Una vez obtenido la masa molida, se procede amasar bien agregándole sal. Lista la masa se colocará el budare en la cocina para su calentamiento y elaborar nuestras arepas.

Listas nuestras arepas la podemos acompañar con lo que deseamos, en esta ocasion rellenamos las arepas con unos ricos moluscos guisados, para de gustar en el desayuno Ready our arepas can be served with whatever we want, this time we filled the arepas with some delicious stewed mollusks, to enjoy at breakfast.
