Ceviche con Sardinas.....Esp-Eng.

Saludos amigos, amigas, chef, unos profesionales, otros aficionados, pero con un mismo objetivo que es que nos gusta comer platos deliciosos preparados en casa.
Dentro de nuestra gastronomía venezolana, que son muchos también hemos adoptado platos típicos de otros países, como el arroz chino, que venezolano no le gusta un arroz chino que ya los hacemos y ya es venezolano, así como las pizzas o pastichos que son de Italia.
En esta oportunidad voy a compartir como hice mi ceviche, este es un plato originario de Peru, el cual se compone principalmente de pescado fresco, el de su gusto, pero como decimos la carne sin espinas. Como en Venezuela tenemos pescado de mar y de rio, pueden ser de los tipos, pero de mar es como mas rico, el gusto es diferente. Este es un Ceviche de Sardinas.
Ingredientes:
Sardinas frescas.
Limones.
Cebolla, pimentón, perejil o cilantro.
Sal.

Vamos a la preparación:
Primero por las sardinas, que si las consiguen fileteadas es mas rápido, pero si están enteras toca prepararlas: escamarlas, luego abrirlas para sacarles las tripitas, la hiel que amarga, cortar las cabezas, quitar el espinazo del medio. Si usan otro pescado, igual hay que quitarle la espina del centro, es preferible los pescados sin espinas en el cuerpo, no se si me entienden.
Preparadas las sardinas lavarlas bien para quitar si quedo algunas escamas, o la sangre, escurrirlas.
La condimentamos con sal primero y las guardamos para seguir con lo demás.
Los limones, empezar con unos 12, si son jugosos no harían falta más, pero si sobra jugo o zumo del limón, hacemos limonada.

Con los aliños lavarlos bien, quitar lo que tengan feo, la piel cascara de la cebolla, las semillas al pimentón y al ají que ya no es dulce, pica por eso le pongo uno solo. Al perejil o cilantro solo las hojitas, las ramas o tallos se los quito.
La cebolla, pimenton y el aji, picarlos en julianas delgadas, el perejil bien picadito.

Buscar un envase a mi me parece mejor uno de vidrio, si tiene tapa mucho mejor.
Buscamos las sardinas, colocamos una parte en el envase, luego una parte de los aliños, después el jugo del limon, asi voy colocando hasta llegar al borde superior del envase y colocar todo el jugo de limón, si debe quedar bien cubiertas las sardinas.
Ya que el limón es el que marinara las sardinas y que después de 3 o días, la sardina esta lista para comerlas, no crean que quedan crudas, para nada, es como cuando hacen esos frascos de mariscos: pepitonas, camarones, mejillones.
Una vez pasado el tiempo de las sardinas en el limon, ya esta listo para comer con lo que deseen, a mi me encanta con arepas asadas, como todo buen venezolano que le gusta comer arepas y se come con todo hasta con mantequilla. Ideal para un desayuno o cena.
Si tiene una reunión, compartir con amigos llévelas, van a causar sensación y van pedir mas hasta la receta.

Today I’m going to share how I made my ceviche. This dish originates from Peru and consists mainly of fresh fish—whatever kind you prefer—but, as we say, the fish should be boneless. Since we have both saltwater and freshwater fish in Venezuela, you can use either type, but saltwater fish is tastier; the flavor is different. This is a Sardine Ceviche.
Ingredients:
Fresh sardines.
Lemons.
Onion, bell pepper, parsley, or cilantro.
Salt.

Let’s get started:
First, the sardines—if you can find them filleted, it’s faster, but if they’re whole, you’ll need to prepare them: scale them, then split them open to remove the guts and the bitter gallbladder, cut off the heads, and remove the central bone. If you’re using another type of fish, you’ll still need to remove the central bone; it’s preferable to use fish without bones in the body—I hope you know what I mean.
Once the sardines are prepared, wash them thoroughly to remove any remaining scales or blood, then drain them.
Season them with salt first, then set them aside to continue with the rest of the recipe.
Start with about 12 lemons; if they’re juicy, you won’t need more, but if there’s any leftover lemon juice, make lemonade.

Wash the ingredients thoroughly, removing any unsightly parts: the onion skin, the seeds from the bell pepper and the chili pepper (which is no longer sweet—that’s why I’m only using one). For the parsley or cilantro, use only the leaves; I remove the stems.
Chop the onion, bell pepper, and chili pepper into thin julienne strips, and finely chop the parsley.

When looking for a container, I think a glass one is best—and if it has a lid, even better.
Find the sardines, place some in the container, then add some of the seasonings, followed by the lemon juice. Continue layering until you reach the top of the container, then pour in all the lemon juice—the sardines should be well covered.
Since the lemon is what marinates the sardines, and after 3 or days, the sardines are ready to eat, don’t think they’re raw—not at all. It’s just like when they make those jars of seafood: clams, shrimp, and mussels.
Once the sardines have marinated in the lemon juice, they’re ready to eat with whatever you like. I love them with grilled arepas—like any good Venezuelan who loves arepas and eats them with everything, even butter. Perfect for breakfast or dinner.
