I have been thinking for a while what to do with certain cuts of meat that I don’t really cook. Like Beef Short Ribs for instance. I have a bunch in my freezer from the last cow I had butchered. So I decided to thaw them out and slice off the fat and gather up the meat. Then I made a marinade and vacuumed sealed the meat in with the marinade over night. Then this morning it was time to...

This is my first time attempting to make beef jerky, so I have no idea how long this is gonna take. I tried to keep the meat sliced pretty thin so it would cook quickly.

I have some Apple wood chips soaking in a bowl. The wet chips should provide a longer lasting smoke... I hope???

I am thawing out some more beef and I plan on keeping this jerky making going over the next few weeks. I have a lot of beef in the freezer that should work great for jerky. I might even run some on my Green Mountain Pellet Grill at the same time. After this first batch it done I will give you all a little update.
