Egg Drop Soup - Lori's Cookbook

Some of you are aware that I recently had to battle influenze (probably type B as that was definitely going around our area at the time - but it doesn't really matter.) I had pretty much the whole gamut of symptoms as you read down the webmd site.

Fortunately, as I knew I was going down with influenza, I quickly asked for some help for healing things... not that I don't usually have ideas of what to do, but having recently dropped carbs out of my diet until harvest season to try to get a handle on my weight issues, I wasn't sure what to do that wouldn't put me out of ketosis and back into fat-storage mode.

Here is one of the solutions I was given. Had I not been the one sick, I would have done more of this...

This is my entry for this week's @foodfightfriday challenge.
It's not beautiful, but it's very nourishing - perfect for the flu season!

Egg Drop Soup

I started with about:

  • 1 pint of bone broth

(Mine is homemade - this time, it was largely ham stock from Christmas.)

When it is boiling (or just simmering is fine), add:

  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1 teaspoon garlic granules
    Add other spices as desired, such as: ginger, bay leaf, rosemary, whatever you like.

(My salt is a himalayan/real salt blend.)

Beat in a cup:

  • 1 egg (or more)

With the soup still hot, drizzle the beaten egg into the soup.

Pour into a bowl and drink.

This recipe is also great if you have any reason why it's difficult to eat. It's highly filling and has a ton of nutrients in it which will help repair you or sustain you until you are well enough to eat regularly again.
