A Witch in the Kitchen: "Delicious Cassava or Mandioca Bread"

Hello Dear Witches...!

I continue adding vegetables to my breads, this time it was the turn of yucca, cassava or tapioca, which are some of the names by which this delicious and nutritious tuber is known. Most of the cassava breads are prepared from its starch, however I have prepared this with the boiled tuber, a little more work but undoubtedly a more natural product and free of so many chemicals.



Many add dairy-based salted white cheese to this preparation, however, I opted for a vegan version, a soy cheese that also added a delicious flavor. It's a simple preparation even when it requires a little more work than other preparations I've shown you, but without a doubt the result is well worth the effort.



Its texture is a little denser than those made with starch, but its flavor compensates, ideal to accompany a delicious cup of tea or coffee, at home everyone was in love with them, but come with me and I show you can make them. Enjoy! .


Ingredients


  • 1.2 kg of cooked and grated cassava.
  • 1 cup cooked linseed.
  • 800 gr of wheat flour for breadmaking.
  • 4 tablespoons of sugar.
  • 1 teaspoon of common salt.
  • 200 gr of tofu or vegan cheese.
  • 1 Tbsp baking powder

    • Preparation time: 20 Minutes
    • Baking time: 25 Minutes
    • Yield: 40 breads


    • We begin by adding the sugar, salt, vegetable cheese and cooked flaxseed, and we mix



      On the other hand we are mixing the wheat flour with the baking powder, and continue adding to the mixture of cassava on the side, we begin to integrate and pass the preparation to an allowance to continue integrating the wheat flour and kneading, this process suggests doing it little by little, until we have integrated all the wheat flour.



      Knead until you get a soft dough that does not stick to the fingers, then cut into small portions and shape our buns, which we have in a baking tray previously greased, these breads will not grow in the oven and do not merit a process of leavening, go directly to a preheated oven at 220 ° C, for about 25 to 30 minutes, or until you introduce a toothpick this comes out clean.



      The result, beautiful and golden yucca breads, with a spectacular contrast of flavors, the right touch of sweet and salty, which makes it ideal for a rich snack or share with our friends and family, remember, accompany them with a rich cup of coffee.

      Now those look really tasty. I typically eat whole wheat bread instead of white because of the whole wheat. Does cassava come pre-grated?

      You can get yucca flour, it works the same, in fact if you get this yucca flour is not necessary to include wheat flour

      I am always interested in adding different ingredients to make bread tasty or even to have a different taste.

      How inventive to add the tuber, but, when I think about it, it is something I probably should have thought of. I also like using things that I have on hand to create. :)

      This bread looks delicious! A good cup of coffee sounds like the perfect thing to go with it!

      Hmmmm... I think that I would also have a strong coffee with that! They do look quite interesting, although I can't really imagine the flavour... pity, the internet is so limited for that sort of thing!

      That sounds really good. do you boil the yucca in water and then smash it? One of my goals is to grow yucca next year :)
