Fresh Collard Greens and Homemade Falafel

I woke up early this morning to work on my pottery. I finished trimming and carving my objects and put them away to get bone dry which will take about a week. After working for several hours in the garage I was hungry.

I came inside and decided to cook some collard greens and falafel. I actually thought about the falafel last night before I went to bed. I put 2 cups of dried garbanzo beans in some water to soak overnight.

When I tried to find the recipe that I used for the falafel that I made the last time, it was taking forever. I decided to use the new search feature on Steempeak because I know that I wrote about it and shared the process on Steemit last year. Well, I couldn't find my post but I found several good recipes from other Steemians.

This post by @exploretraveler was made back in 2016! It sure did help me out in a pinch.

I love this new search feature! If you haven't tried it, you should check it out.

I put all of my ingredients into my food processor as shown.

After pulsing it for several minutes, I put it in the refrigerator while I prepared and cooked my collard greens.

I used vegetable bouillion, salt, smoked paprika, onions and red pepper in my collard greens.

When the collar greens were done, I made some small patties out of the falafel mixture. I also added a small amount of flour to help them stick together. I made patties instead of balls so that I didn't have to use a deep fryer pot.

Enjoy your day! It's time to eat lunch and I am hungry. :) Bon Appetit!
