Today: CATCHOUPA - CABO VERDE
Each country has its culinary specialty. Often popular at the base, then improved for tourism, it manages to take different forms and even different flavors.
Here in Cape Verde, the dish of the peasant, the worker, at 10 a.m. or 2 p.m., is called La Catchoupa. A pot having already work a lot (!), kilos of grains, tomato paste, a few pieces of meat, spices but I don't know which ones, and especially hours of cooking. See with @phillarecette if you want a more detailed recipe, for my part I am an eater and not a cooker!
The whole can take several textures. A soup version that we will finish saucing French-style with bread, a much drier "grizado" version, or even with a fried egg covering everything for those who do not want to risk a craving during day !! There you go, enjoy!

Pour la citation, c'était juste un petit clin d'œil entre francophone. J'aime bien manger mais je n'y comprends rien en recette de cuisine, du coup je redirigeais vers un spécialiste !
