Good morning my friends! This weekend has been a busy one in the Bird nest! Juggling outdoor projects between thunderstorms and cooking up tasty treats in the kitchen the weekend was declared a success!


We’re having a bit of rain again this morning but we’re not going to let that put a damper on our Fruits and Veggies Monday party are we? Nope, we'll all show up just like @lenasveganliving and @plantstoplanks hosting this weekly gathering with attendees from all over the world. Thank you to both of you! Mondays just wouldn’t be the same without Fruits and Veggies Monday!


The Birds are planning to attend a little gathering…

of the neighborhood flock this evening. We’ll each bring one of our favorite dishes to share. Reading through the group email I noticed a huge gap in the menu! Lots of carbs but nothing green! I knew I would have to remedy that!

Broccoli to the rescue

We all know broccoli is so good for you! A member of the brassica family it is closely related to Brussel sprouts, Cabbage and Kale. It may look like a tree to some, but it’s not! You can eat the whole thing! Broccoli is packed full of vitamin C and K along with Potassium and fiber. Did you know Broccoli even contains protein? Wow! Eating raw broccoli can help with inflammation and it may help prevent some cancers. Sounds like something I need to share with my friends this evening, right?


Let’s get started!

  • Fresh Broccoli (1 lb.)
  • Raw Sunflower Seeds (1/2 cup)
  • Organic Dried Cranberries (1/3 cup)
  • Red Onion (diced) (1/2 cup)

Toast the sunflower seeds…


Over medium heat. The toast quickly so keep a close eye on them!

Toss everything…


together in your favorite serving bowl.

Now the dressing!

  • Olive Oil (2/3 cup)
  • Mustard (2 tbsp.)
  • Apple Cider Vinnegar (4 tbsp.)
  • Maple Syrup (2 tbsp.)
  • Minced Garlic (1 ½ tsp.)
  • Sea Salt (to taste)
  • Pepper (to taste)

I love making my own dressings!


I can mix and match as I wish and I know the ingredients are always fresh! Whisk or briefly blend everything together! Taste, and add salt and pepper as you wish!

Toss your salad with dressing and refrigerate at least 4 hours, preferably over night to allow the flavors to blend nicely! It's early here so I think the salad will be perfect by party time!

The dressing gets better each day! Mr. Bird is a huge honey mustard fan so I just subbed in Maple syrup and he was just as happy! I went home with an empty bowl after the party so I guess it was okay, lol Thanks sweet friend! :)

Oh, this looks delicious and nutritious! Ha! My neighbors make fun of me because I am the one who always brings the things that everyone should be eating and nobody makes it. LOL

Party time is the motto!

I love that the ingredients are things I almost always have on hand and the dressing is easily put together! Things are really cooking at the Birdhouse!

lol yes, my friends definitely don't understand me :) I'm always bringing some "unusually healthy" dish or dessert, lol I've stopped telling them what it is! The bowl was indeed empty, so I guess it was a success! I hope you'll make it, the dressing is nice to have around. Thanks my sweet friend, you always know how to make me smile!

Easy and delish! I've been enjoying cranberries in black rice salad of late! Well, I'm kinda addicted to black rice in general, and cranberries, so... AND I have a lot of purple sprouting broccoli, so might do a variation of this for tonights tea!

Yay! Glad you were able to get your post in this week despite any HF21 challenges. I took the afternoon off from Steeming, but was happy to see this delicious dish pop up before I signed off. I love bringing things like this to get-togethers, too. Always great to have a healthier option, and most of the time people enjoy this just as much or more than the other dishes!

Only got back on today and ran straight into this great salad.
Amazing as we also bought broccoli and cauliflower today.
Onions we have aplenty and I will show Marian your dressing. Selah!

Oooh - INTERESTING flavour combinations!! Our local minimart has just started selling dried cranberries fairly cheaply, and thus far I have only been using them in apple-cranberry crumbles. This looks AWESOME. I think I'm gonna try this, and add some diced roasted pumpkin too. Yum.
