fruit n veggies galore monday

When the whole garden comes together, life is good.

I spent my day picking tomatoes and canning salsa. So I worked up a huge appetite.
~ soup was my mother’s creation, veg broth steweded tomatoes and all the veggies from last year.

~ salad was fresh greens with new radishes and green onion.
Hot bbq sandwich was a bit more complex.
Korean bbq sauce
Black beans n tofu shredded
Diced red bell pepper

My hot sauce( red chilies, peach and tomatoes)

Took my garden harvest and skinned the tomatoes
then simmered together for 20 minutes. Added vinegar and peacches towards end Blended, strained and then heated for additional 20.
I did can a few pints. And had one bottle ready for consumption.
After sauté the beans and sauce and peppers I thru in spinach and spun til sauce absorbed. Then tossed into s bun.
