The Philippine Dalagang Bukid Fish is also known as the Yellow Tail Fusilier Fish. The translation for Dalagang Bukid means Mountain Maiden or Farm Girl and the fish was named because of red underside of the fish resembles the dress of the filipinas dress they wore in the Mountains or in the Rice Fields. This is a fairly common fish in the Philippines and it is very common in wet markets all over the country

Luckily, I dont have to travel to the seafood market to buy this delicious fish. It is being delivered right in front of my doorsteps by my very reliable fish vendor on wheels.

Aside from bringing me the freshest catch of the day, she also whispers to me the freshest news that is happening in my neighborhood. Treat her like a living local town newspaper with informations even about the personal lives of my townsfolks.

A special offer that i also get from her is the free cleaning of the fish. She takes away the innards of the fish. Gills and intestines are taken out for your convenience. You just need to wait a minute or two and she is done.

The are many ways you can cook this Dalagang Bukid fish. You can make a sweet & sour dalagang bukid or even an adobo. But my favorite is rolling them in flour with salt & pepper & frying them to perfection.

Just get a cup of hot fried rice and you can already have a sumptuous meal with the fairest maiden in the fields. ...the Dalagang Bukid !
