White Vegetable Menudo (Menudong Gulay)
Menudo, also known as pancita or mole de panza, is a traditional Mexican soup, made with cow's stomach in broth with a red chili pepper base. It shares a name with a stew from the Philippines made with pork and pork liver. Hominy, lime, onions, and oregano are used to season the broth.- Wikipedia
Menudo is a well known Filipino dish too that is always present in every big family gatherings & social events. Its basic ingredient is pork & pork liver plus vegetables in tomato sauce. However, we will make a twist in cooking the usual menudo. We will take away all the meat and will just settle for the vegetables instead and also leave the tomato sauce behind.
Get the following veggies : Sayote, Baguio beans, turnips, sweet potatoes, carrots, cauliflower, broccoli, corn and any other vegetables you want. Cut them in very small bite size pieces. In a wok, put oil, garlic & onions then add all your veggies.
Then add soup stock and bring it to a boil. Must wait for the veggies to soften.
Then add all purpose cream to thicken the sauce or you can even add evaporated milk. Season it with salt & pepper to taste.
You see, a menudo can be improved depending on the available ingredients. Since pork & meat are a bit expensive, vegetables will do. All you need is a little imagination and a lot of love in cooking it.
