Moringa and Red Beans for Breakfast

You could say one of my favorite vegetables is moringa. Moringa is a healthy food you could consume by making juice, tea, or vegetables. I prefer to eat them as vegetables because I think it's delicious. Now, I'd share with you all, Hive citizens, our menu for breakfast today. It's the moringa and red beans soup, well, if you could call it a soup.

We bought the moringa leaves at the local market. At home, we picked the leaves and throw away the little branches. We are not supposed to eat the little branches, they don't taste as good as the leaves.

First, we cooked the red beans in boiling water in the pan. While waiting for the red beans to turn softer, we prepared the seasoning.

For the seasoning, we put some garlic, onion, galangal, macadamia nuts, turmeric, coriander, chili, and a pinch of salt in the pestle and mortar. Next, we ground all these ingredients.

We took the seasoning paste from the pestle and mortar, and put it into the pan to mix with the red beans.

We let the seasoning mixed in the water with the red beans. You could also stir it, to help mixing it. Finally, we added all the moringa leaves into the pan.

We cooked the moringa leaves for a few minutes. It did not take long for the leaves to be soft and ready to serve.

And that's my breakfast for today: moringa and red beans soup, with some fried fish, sambal and steamed rice. A typical Balinese Indonesian breakfast. What about you?
