I can’t remember the last time I shared a recipe with you—or at least a photo of a dish I made—because, even though I’m still cooking up new creations every day, the truth is that I rarely have time to share them with you, or worse yet, to even take some decent photos of them, However, today I’m here to share what has been a real discovery for me—one that blew the taste buds of everyone at home and many of our customers. For quite some time now, one of my customers has been insisting that I make a burger with chorizo jam, and to be honest, I kept refusing to give it a try—it just didn’t seem like a viable combination to me.

I set out to do some research to see if I could find a similar recipe—and to see if that might encourage me to try making such a crazy creation. However, all I found online were recipes for glazed chorizo, and that wasn’t what I wanted for a new burger. So, I did what I do best: I improvised, mixing recipes and techniques to see what would come of it. After all, I was just going to do a test run. To my surprise, the combination of flavors is spectacular, and adding different textures to the burger turned it into an explosion of flavors and textures that everyone who’s tried it has fallen in love with.

The most important thing to keep in mind when making this recipe is to find a high-quality chorizo with a good flavor; I used some smoked chorizo; for me, this was the best option because its flavor is more neutral, so it pairs better with the flavors we’ll be adding during preparation. Although this recipe was created to develop a new burger for my business, the truth is that you can make a great sandwich just with this jam and a good selection of fresh vegetables. Join me, and I’ll show you how I made this crazy creation.
For this jam, I decided to remove the casings from the chorizos, cut them into cubes about 6–7 mm thick, and place them in a hot pot—preferably one with a thick bottom—and sauté them until the chorizos release as much fat as possible.

Remove the chorizo from the pot as soon as it turns golden brown and has released most of its fat, then add the finely chopped onion. Cook over medium-low heat so that the onion caramelizes and loosens anything that has stuck to the bottom of the pot.

Once the onion has caramelized, add the coffee and let it reduce a little, then add the chili jam, stir well for a few minutes, and add the Coca-Cola.

Coca-Cola and sweet chili jam will provide the sweet touch that turns this mixture into a jam. We continue by adding the spices and salt, along with the chorizo we set aside earlier, and let it simmer over low heat for about 15 minutes, stirring constantly. Since this recipe doesn’t contain any added sugar, it doesn’t have the syrupy consistency typical of jam and looks more like a stew than a jam; however, its flavor is completely different from that of a stew.

Now that our jam is ready, it’s time to assemble the burger. For this one, I wanted to combine smoky and sweet flavors, paired with crunchy textures that would contrast with the jam. I should mention that we made it with both a beef patty and crispy chicken, and the winner was the crispy chicken version—it provides a great contrast in both flavor and texture. Smoked mayonnaise and pickles on the bottom bun, crispy chicken and cheddar cheese to hold our chorizo jam, and we topped it off with crispy onions (trust me, this is a treat—you don’t even realize you’re eating onions), then covered it with the other bun, adding more smoked mayonnaise and ketchup.

As I mentioned at the beginning of my post, I didn’t have much faith in this recipe—chorizo jam didn’t appeal to me at all—but the result surprised me—the combination of flavors and textures is absolutely wild, creating a real feast for the palate. You definitely have to give it a try at least once in your life. If you’re the type who isn’t afraid to mix these kinds of flavors, you’re going to love this, no doubt about it. For now—even though this burger has been available to the public for almost a month—we haven’t given it a name. And since we offer a different burger on our menu every month, we’ve called it “The Nameless Burger of the Month.” But we need to come up with a name for it ASAP, because thanks to its popularity with customers, we’re considering keeping it on our menu permanently.

Ya no recuerdo cuando fue la última vez que compartí con ustedes una receta, o al menos una foto de alguna preparación, y es que, aunque continuo creando en la cocina a diario, la verdad es que, mi tiempo pocas veces me da para compartirlo con ustedes, o peor aún, para tan siquiera hacerle unas fotografías decentes, sin embargo hoy les vengo a compartir lo que para mí ha sido un descubrimiento que hizo explotar las papilas gustativas de todos en casa y de muchos de nuestros clientes. Desde hace un buen tiempo una de mis clientes, me insistió mucho en que preparara una hamburguesa con mermelada de chorizo, y la verdad es que me negaba a darle la oportunidad, no me parecía una combinación viable.
Me dispuse a investigar a ver si encontraba alguna receta parecida, y ver si de esta manera me animaba a preparar tal locura, sin embargo, lo que me llovió en internet fueron recetas de chorizo glaseado, y no era lo que deseaba para una nueva hamburguesa, así que, hice lo que mejor se hacer, inventar, mezclar recetas y técnicas para ver que salía, después de todo solo era una prueba lo que iba a hacer. Para mi sorpresa la combinación de sabores es espectacular, y agregándole diferentes texturas a la hamburguesa, hizo de esta una explosión de sabores y texturas que a todos los que la han probado, se han enamorado de ella.
Lo más importante a tener en cuenta para la elaboración de esta receta, es encontrar un chorizo de buena calidad y buen sabor, yo utilice unos chorizos ahumados, para mi esta era la mejor opción, pues su sabor es más neutro, y de esta manera se ajusta mejor a los sabores que vamos a adicionar en la preparación, aunque esta receta se hizo para crear una nueva hamburguesa en mi negocio, la verdad es que, podemos preparar un buen sándwich solo con esta mermelada y una buena selección de vegetales frescos. Para esta mermelada decidí retirar la piel de los chorizos, y cortamos en cubos de unos 6-7 mm de espesor, y llevamos a una olla caliente, preferiblemente de fondo grueso y salteamos hasta que los chorizos suelten la mayor cantidad de grasa posible.

Retiramos el chorizo de la olla en cuanto este se vea dorado y haya desprendido la mayor cantidad de grasa, para continuar agregando la cebolla finamente picada, cocinamos a fuego medio bajo, para que la cebolla vaya caramelizando y despegue todo lo que haya quedado pegado al fondo de la olla.

Cuando la cebolla haya caramelizado agregamos el café y dejamos reducir un poco, para continuar agregando la mermelada de ají, revolvemos bien por unos minutos y adicionamos la coca cola.

La coca cola y la mermelada de ají dulce, serán las encargadas de adicionar ese toque dulce que convierte esta preparación en una mermelada, continuamos agregando las especias y la sal, para agregar también el chorizo que tenemos reservado, y dejamos cocinar a fuego mínimo por unos 15 minutos revolviendo constantemente. Como esta preparación no lleva azúcar añadida directamente, no tiene esa consistencia melosa que suele tener una mermelada, y parece más un guiso que una mermelada, sin embargo, su sabor es totalmente diferente a un guiso.

Con nuestra mermelada lista, es hora de armar la hamburguesa, para esta quise combinar sabores ahumados y dulces, acompañados de texturas crujientes que dieran contraste con la mermelada, debo decir que la preparamos con una hamburguesa de carne y con pollo crispy, y la ganadora fue la de pollo crispy que le hace muy buen contraste en cuanto a sabor y textura. Mayonesa ahumada y pepinillos en la base de nuestra hamburguesa, pollo crispy y queso cheddar para soportar nuestra mermelada de chorizo y coronamos con cebolla crispy (créeme esto es una delicia, no te das cuenta que estas comiendo cebolla), y tapamos con el otro pan con más mayonesa ahumada y kétchup

Como lo comente al inicio de mi post, no tenía mucha fe en esta preparación, no me llamaba la atención en lo absoluto una mermelada de chorizo, sin embargo, este resultado me sorprendió, la combinación de sabores y texturas es una completa locura que hace una gran fiesta en nuestro paladar, y que definitivamente debes permitirte probar al menos una vez en la vida, si eres de los que no le teme a combinar este tipo de sabores, sin duda alguna esta te va a encantar. De momento y aunque ya tenemos casi un mes con esta hamburguesa disponible al público, no le hemos puesto un nombre, y ya que mensualmente ofrecemos una hamburguesa diferente en nuestro menú, la hemos llamado La Sin Nombre del Mes. pero debemos conseguirle uno urgente, pues gracias a la buena aceptación del público, estamos considerando dejarla definitivamente en nuestro menú.
