This week's Hive Top Chef Ingredient is CHICKEN WINGS.
I'm sure for many of us when we think of Chicken Wings, it would either be BBQ, Fried, Roasted or Baked; if I was back home, I would do the same too. However ever since I've been in Vietnam, I've cut down on my intake of such oily & dry meat. Instead, it's either braised, boiled or steam - it's so much more healthier for the body.

So, for this week's post of Chicken Wings, I decided to share a dish which I prepared just a few weeks back. It's called Braised Chicken Wings with Chinese Black Mushroom & Hard Boiled Eggs. This is a very Chinese cuisine and if you don't like chicken, it can always be replaced with other white meat.

A simple dish like this is easy to prepare just under 30 minutes and can be enjoyed with a hot bowl of steamed white rice and blanched vegetables. That's how I would serve it; all the proteins needed. So, let's start with the ingredients first:-

10 pieces of chicken wings
4 hard boiled eggs
10 numbers of Chinese black mushrooms (soaked and heads removed)
1 piece of old ginger
3 pieces of dried chilli (optional)
1 tsp Chinese cooking wine
2 tbsp Oyster sauce
Salt & pepper (for taste)
1 tbsp of sesame oil
1 liter water

Using a large stock pot, add in the sesame oil & ginger. Stir fry the ginger till golden brown & the fragrant comes out. Add in the chicken wings and mix well for 1 minute. Add in water, mushrooms and oyster sauce. Let it boil and then turn down the fire to allow it to simmer for 15 minutes. Add in Chinese cooking wine, eggs, salt & pepper and mix well. If you like the pungent spiciness, add in the dried chilli. Allow it to simmer for another 10 minutes and it's ready to serve.

Once it's ready, this is how it looks in the pot. Isn't this attractively appetising. Just one of my favourite home cooked dishes and does well with the children as well.
