This week's Hive Top Chef Ingredient is RICE.

Now, many people would immediate think about rice as it is when looking at this post but I thought I'll give it a bit of a twist. In Vietnam the locals hardly eat rice and even if they do, it would most likely be broken rice, glutinous rice or rice noodles. This is their version of staple carbo to their diet. So, today, I'll like to share a recipe of rice noodles which is common and easy enough to prepare in your own kitchen.

What you see here is the final product of my version of homemade rice noodles with clear broth. For the ingredients, it's pretty simple but there are a few must-have to complete the meal.

Ingredients:-
Fresh rice noodles, best to be purchased from the local market
Fresh beansprouts, wash through cold salted water

2 whole tomatoes, cut into 4
1 whole white carrot, diced small
2 whole potatoes, diced small
1 whole Knorr Pork cube, as stock
4 pieces of dried red dates
4 pieces of chicken drumstick
1/4 pot of water, for broth

Fresh rice noodles and beansprouts is a must in every Vietnamese Rice Noodle dish. For the other ingredients, you may add anything into the broth. It can be vegan or full of meat or even seafood. To spice it further, add 1 or more Knorr Pork cube to enhance the flavour. Knorr pork flavour cube is only found in Vietnam since pork is in almost every dish in Vietnam. If you don't have pork cube, you can always try chicken or beef or shrimp flavour cube. Whichever works for you.

Both rice noodles and beansprouts needs to be blanched in hot water for a few minutes, just to soften it a bit. Once done, place both ingredients onto a bowl and set aside. Next is to prepare the broth. For me, I've diced the white carrots and potatoes, cut the tomatoes into 4 and add in the Knorr pork cube. I also added a few pieces of dried red dates to give it a bit of Chinese kick. For meat, I used chicken drumstick for easy chewing. Allow the broth to boil for approximately 35 mins so that the flavour from the vegetables, chicken and dried red dates comes out.

Once completed, pour the broth onto the bowl of rice noodles and beansprouts. You can add in the ingredients from the broth onto the rice noodles as you wish. I do like to add in a few pieces of fried minced pork once a while. The best part of this dish, it can be prepared in advance and enjoyed throughout the entire day so long as you keep the broth warm. As for the rice noodles and beansprouts, it can be kept in the fridge for a day or two depending on you.

This dish if ordered from the restaurant, it may cost averagely VND40,000 = USD1.72 = MYR7.47 or more for one order. Since, I'm having this at home, it only cost me VND25,000 = USD1.07 = MYR4.67 for at least 3 meals. Absolutely value for money. Knowing me, I try to be cost effective in my meals since we never know when our financial will run dry especially during these hard times.
