Hive Top Chef! | Weekly Cooking Competition | One Pot Dish is my normal

This week's Hive Top Chef Theme is One Pot Dish which is very familiar to me ever since I relocated myself to Vietnam to work last year. In the beginning, I would prepare my dinner every other day, but after a while, it was just too much work. And yeah.. I got too tired after work to even bother to cook. Some days, I just eat cereal or have a hot cup of Milo or it's instant noodle.

It was then that I decided to just cook a whole pot of dish - one that had both protein and carbo needed for a meal. I would cook in larger portions; enough for at least 3 meals ( Monday till Wednesday ). On daily basis I just needed to boil some spinach or have some fresh lettuce to go along with my one pot dish.

For this theme, I decided to share one of my One Pot Dish Braised pork with chinese mushroom, eggs & beancurd. It may not look appealing in the photo but it has all the nutrition needed for one meal.

This is a full hearty meal and for me it's as close to comfort food. I've always prefer dishes with sauce or slightly soupy; after all I am Cantonese so it's only natural to cook dishes of the same texture. If you like Chinese cuisine, you should try cooking this dish. It's very easy to prepare and taste good if I say so myself 😊 and can be eaten with rice, porridge or even man tao. Man Tao is actually steam bread and we frequently eat it with anything that has sauce.

For the ingredients :

1 stick cinnamon stick
1 star anise
3 cloves
3 tablespoon of oil
4 whole eggs - boiled in advance
2 large pieces of beancurd cut into small pieces
Chinese mushroom - soaked to remove sediments & drained. Remove stem
500 grams partial lean pork meat - seasoned with salt, pepper & 5 spice powder
Dried chilli - if necessary

For the sauce - mixed all together
Oyster sauce
Chinese cooking wine
Salt for taste
500 laters of water
Corn flour - if necessary

The cooking procedures is simple.

Slightly stir fry pork with oil till golden brown.
Add in mushroom, eggs and beancurd.
Add in the sauce and let it simmer for 15 minutes.
Once done, place it onto a dish platter and it's ready to enjoy.

If you prefer the sauce to be thicker, you can add in corn flour mixture and if you like your dish to be spicy, throw in a few dried chilies. Isn't it simple and easy to prepare 😄

First step - stir fry pork meat. You can replace with chicken if you prefer

Once, it's golden brown, add in the rest of the ingredients

A full complete dish is ready to enjoy

Let me know if you have tried preparing this dish and how it comes out to taste. Oh yes.. it taste a bit sweet because of the oyster sauce and has a fragrant smell due to the Chinese cooking wine.
