ππβ€οΈ Ital Coconut Potato Soup (Aloo Ki Kadhi) π₯₯π₯πΆοΈ Qurator's Hive Top Chef π₯£ SOUP
This coconut potato soup is a family favorite, and delicious with rice, rotis, bread, crackers, or even just all by itself.
It has been far too long since I've shared a #plantbased recipe, but our new kitchen at our rental only has a hotplate and a rice cooker, something I mentioned in my previous recipe post
.
Needless to say, the food preparation situation is not ideal, but as we are migrants, we don't have the means or the desire to invest in furniture and kitchen appliances.
Qurator's: Hive Top Chef! π¨βπ³ Soup π₯£
Β Β Β At our former Ital restaurant in Cambodia, this soup was a commonly featured soup on our daily thali. I thought it would be perfect for the newest @Qurator Hive Top Chef Competition, so I've decided to share it with you all.
Β Β Β We don't cook with coconut milk here, mostly because it's not an ingredient you can buy fresh from the market like in most Cambodian towns. Worse yet, we can't even buy fresh shredded coconut meat in Suriname, so we resort to making coconut milk from frozen shredded meat, something that is perfectly normal here.
Β Β Β This soup is very hearty, and the quality of the coconut milk will affect the final product. I must say this dish tastes better when prepared in Cambodia, but it still gave us the feeling of nostalgia for our former business.
π₯₯ Coconut Potato Soup Ingredients π₯
β 1 big potato (boiled,peeled, and mashed)
β coconut milk - 1 cup
β 4 medium potatoes (boiled, peeled, and chopped)
β cumin seeds - 2 tsp
β besan - 2 tbsp
β fenugreek seeds - Β½ tsp
β black pepper - Β½ tsp
β bay leaves - 2
β dry red chilies (cut into pieces) - 2
β ginger (minced) - 1 tbsp
β garam masala - Β½ tsp
β sea salt - 1 to 2 tsp
β green onions, fresh chilies, dried chilies (sliced) - 2 tbsp
π¨βπ³ Preparation Method π₯
Β Β Β This soup is one of Monkey-B's favorites, and she really loves it when I add fried tofu to this. It's a delicious soup, and you can jazz it up with anything else you have lying around.
Β Β Β I happened to have several green onions, Madame Jeanette chili peppers, and dried red chilies, so I sliced them up to enjoy with the soup.
Β Β Β Food tastes better when you eat it at ground level with loved ones.

The closest thing I know in Jamaica might be "sip," but this is definitely very different. Jamaican-ize it with fresh thyme, red onion, and allspice, then the Jamaican people would love it more. Bless up! !ENGAGE 10

tokens.I love how you know spices and where to put them. I bought fenugreek a few weeks ago for some reason but I'm afraid to put it in something. I also never thought of using besan this way but I can see how it would really work. Looks delicious.

Give thanks for the kind words. Fenugreek seeds are incredible, a little bitter, a little bit maple syrup, a flavor hard to describe. A good way to get to know your fenugreek seeds is just to boil them with water to make simple tea, and this tea is known to help with menstrual cramps.
Frying besan is a great way to start a soup base, one of my all time favorites, and of course, yes, eating on the ground brings us closer to where our food came from. !ENGAGE 30
